    As long as you are sure to completely combine the egg and the banana, no, they will not turn out like an egg omelette! They really do end up with a pancake consistency. I enjoy the egg white idea... Sounds fluffier and would be more convenient since I never use whole eggs. I just buy egg whites.

    As far as the blender goes, yes! I have read multiple people on the blogilates posts say they use blenders and they turn out well (and I'm assuming it would turn into a much smoother consistency than my horrid mashing skills!)

    I coat the pan with zero cal spray butter, but I think she suggests coconut oil in the video or just a regular pan cooking spray.

    Thaks for posting this! Just made them for brekkie and they are yummy - so light, it's like eating clouds!
    I used a very ripe banana, so it was super easy to mash. I mashed with a spud masher for about 10 seconds, then whisked in the eggs for maybe 20 seconds with a normal balloon whisk.
    I also added fresh strawberries from the garden after it was cooked.

    ETA: and, no, they taste NOTHING like eggs :)
