my version of a 'grilled stuffed burrito', with grilled chicken, cheese, tomatoes, rice, and sour cream.

Looks good. Next time, you need to provide a 'money shot'.

Made a simple spaghetti and baked ground turkey meatballs w/ side of steamed broccoli. Pic is of my son's plate. My portion was more:

And then strawberry lemonade mini muffins:

I seriously need the recipe for the Strawberry Lemonade muffins. Sounds so delish.

My version for the caprese soup http://www.heatherchristo.com/cooks/2012/09/10/caprese-soup/
I was not that generous with the bread, pesto and mozzarella, so I got it at 363 calories. :D
    dsc0197xl.jpg

Rice with see food and peking lemon sauce mixed with some sweet chilli sauce. A small portion, but at 355 calories it stopped some cravings.

chickpea soup (veggie broth brought to a boil with spinach and chickpeas and spices, then puree in a blender and bring to a boil again. it looks weird bc of the color with the spinach and chickpeas but is very tasty. add lemon juice at the end.)

Sweet enchiladas - how did you make the sauce?

The sauce was made from this recipe:

    3 cups vegetable broth

    1/4 cup all purpose flour
    2 Tbsp. olive oil
    2 tsp. cumin
    1/4 tsp. garlic powder
    1/4 tsp. onion powder
    1/4 tsp. chili powder
    Salt/pepper

AMAZING meals everyone, thanks for the inspiration!
I've been aiming for about 2,000 calories a day, so the low-cal "meals" are generally snacks :P
