    Potato soup.

1 28 oz package of frozen hashbrown (the shreds, not the patties)
    1 onion, diced
1 can of cream of celery soup (can use cream of chicken or mushroom too)
4 cups of veggie broth (or chicken broth)
1 block of low-fat cream cheese
    Salt and pepper to taste
We add a little garlic too

Throw in all in, including the cream cheese, and let it cook on low for 6-8 hours

We eat it with sour cream, cheese, and vegetarian bacon bits. Scallions are also nice.

Comes out to around 300 calories a bowl with all the toppings. We had it with steamed broccoli last time, which was lovely dipped in the soup!

Going to try to make without the canned cream of celery next time -- we have a recipe for an all purpose "cream of something" soup base that doesn't have all the sodium in it.

Country style ribs (i put in frozen)
    1 Can Crushed tomato (28oz)
6 cloves of garlic (skin peeled, rough chopped, sauted for 1 min in olive oil)

Ribs will fall right off of the bone and it will be super yummy served over whole wheat pasta!

Easy and CHEAP! (appx $7.00 will make 6 servings; less than a buck a serving!!)

Not sure of the calorie content, maybe appx. 350 - 400 per serving

    THANKS MY HUSBAND LOVES RIBS.
  • Taco soup! It was awesome! I added more spices.
