    I make omelettes every Sunday for my wife. Filling usually depends on what we had for dinner the previous night.

    Last Sunday was Shrimp, Mushrooms, Mini Peppers, Green Onions,Parmesan Cheese, Cilantro and Swiss cheese. 2 Eggs.

    Here is how I make them and they come out great every time:

    Sautee Shrimp, Mushrooms and Peppers. Set aside.

    Whip 2 eggs and pour in heated Sautee Pan. Flip when ready.
    Turn off heat under pan.
    Pour mixture onto half of Omelette. Add Chopped Cilantro, green onions and Parm.
    Fold Omelette.
    Cut Swiss Cheese into 4 triangles and layer across top of Omelette.
    Cover pan with plate until cheese melts. Garnish with a little Cilantro.

    Serve with Fruit and Hashbrowns.

    egg whites, sweet apple chicken sausage, spinach, broccoli, jalapeno yogurt cheese, and a little cayenne pepper :)

    I do a breakfast sweet berry omelette.

    1 whole egg, 2 egg whites beat with almond milk, vanilla extract and some sweetener. Pour into pan and cook like an omelette, pop under grill to do the top. I put strawberries, blackberries, blueberries and raspberries on top with some cinnamon and pop back under the grill. Fold it over and dollop on some Greek yoghurt and drizzle of honey...enjoy!!!!

    My favorites:
    Western (onion, peppers, ham, Monterey Jack cheese)
    Mexican (salsa, potato, tomato, Mexican cheese mix)
    Fat Free Feta
    Feta & Mushrooms
    Meat lovers (bacon, hamburger & turkey sausage crumbles)

    I try to use reduced fat or fat free cheese whenever I can find it. I also use 93/7 hamburger and lower fat sausage in the meat lovers omelette.

    Now I'm hungry. :)

    Ooooo Good one!! I forgot that I've tried shrimp and cheese (cheddar or cheddar combination) omelettes... soooo delicious!!

    I cook my mushrooms, onions, red pepper and spinach in the skillet first, when all that is just about done I add the eggs in... I make it in a small skillet so I don't even attempt to fold it... slap it on a plate, it's like a little egg pizza! OH and don't forget the mozzarella cheese!

    I remember my first omelet. My mom made it for dinner. It was eggs whisked in milk and spinkled cheese with a side of tabasco and ketchup. It was very good.

    I like fresh herbs in mine. But I really love a tsp. Of philly cooking cream. Delish!

    i do

    3 egg whites
    1 whole egg
    red onion
    pepper
    ham
    spinach
    mushroom
    if i have left over broc or cauli from dinner ill use that and with sweet potato etc
    1 table spoon of cottage cheese

    i don't oil the pan either

    2 whole eggs, 1-2 cups of baby spinach, 1 cup of mushrooms sauteed, 1 each mini bell peppers(red,yellow and orange) 1/5 of a medium green pepper, 3 ounces of small(100-150count) shrimp, half a medium onion and 1/4 cup of low-moisture part skim mozzarrella cheese shredded.

    Looks like this when served with 1cup of honeydew melon and 1 cup fresh strawberries

    cream cheese
    fresh sliced ham or turkey
    garlic powder seasoning
    a
    tony's creole seasoning(I put in almost everything I make)
    I have made these omelettes for so many people half of them said they didn't like eggs or omelettes and they came back for seconds....
    simple and amazing
