Cauliflower "Alfredo" Sauce - LIFE CHANGING.

    I am so sick of these FOOD HIPSTERS!! lol!, yeah I said it!, that's what you guys are!! "faw faw!, my food and food choices are far superior to your food and food choices, I am soo much better and more educated on the matter of food than you are...blah blah snarkity-snark!!, lets go and spread our awesomeness and debase these lesser mortals in their silly posts!!"
    Ok YESSS, there is the original Alfredo sauce, which is delicious, I don't think the OP is denying that, or telling people NOT to eat it, she simply found a recipe that cuts the calories-WHAT?!, people try to cut calories on here?!, of all the ridiculous things!..LOL!.

    To those who don't understand why the cauliflower is in there:
    Olive oil, and milk have quite a bit of calories, so if you use LESS of the calorie rich ingredients and SUBSTITUTE using a lower calorie ingredient (cauliflower), this "FILLER" ingredient reduces the over all calories in a serving!!, it's pretty simple people!, also the cauliflower adds thickness to the sauce, as milk is runnier than cream!, any creamy sauce is made either with cream, or a "Bechamel" type of sauce which consists of flour, butter and milk to make the creamy consistency, all of which have way more calories..

    Some of you might not like to reduce calories in this way, and that is fine!, but to crap on someone else's recipe and to debase it of any value is ridiculous!, who the hell do you think you are?!, LOL!.
    I for one like to scrimp and save some cals so that I can eat more!, I also exercise, and I eat calorie reduced and non calorie reduced foods too, it all depends on what I feel like eating, and what fills my daily calorie allowance...to each his/her own darnittt!!!!

    THANKS OP for the recipe!!!, I'm sure it will be a life changer to some!!.

    no you cannot make alfredo sauce with just butter and parm. the cauliflower is a FILLER not a "substitution" for the ingredients in true sauce. it is logical for the fact that it is bland enough to blend in with other flavors, cooks tender enough to blend into the right consistency, has far fewer calories than the equivalent amount of traditional ingredients, AND it is white.

    Actual alfredo sauce is just butter and parm, here is one such recipe

    1 lb. dried fettuccine
    1⁄2 lb. unsalted butter (2 sticks)
    1⁄2 lb. finely grated parmesan (about 3 1⁄4 cup)

    1. Bring a 6-qt. pot of salted water to a boil. Add fettuccine and cook, stirring occasionally, until pasta is al dente, about 8 minutes.

    2. Meanwhile, cut butter into thin pats and transfer to a large, warmed platter. Drain pasta, reserving 3⁄4 cup pasta water, and place the pasta over the butter on the platter.

    3. Sprinkle grated parmesan over the pasta and drizzle with 1⁄4 cup of the reserved pasta water.

    4. Using a large spoon and fork, gently toss the pasta with the butter and cheese, lifting and swirling the noodles and adding more pasta water as necessary. (The pasta water will help create a smooth sauce.) Work in any melted butter and cheese that pools around the edges of the platter. Continue to mix the pasta until the cheese and butter have fully melted and the noodles are coated, about 3 minutes. (For a quicker preparation, bring the reserved 3⁄4 cup pasta water and the butter to a boil in a 12" skillet; then add the pasta, sprinkle with the cheese, and toss with tongs over medium-low heat until the pasta is creamy and coated, about 2 minutes.)

    5. Serve the fettuccine immediately on warmed plates.

    sounds amazing! i love pasta and dont eat read sauces so i am addicted to alfredo sauce but can never really find a healthy one so i am going to try this.

    not always. pasta water is frequently used to make it creamy and thick enough. the starch comes out of the pasta during cooking and thickens the sauce.

    Just to interject...ACG had it right. The authentic/original alfredo didn't have cream. It was butter and parmesan The butter that was used was so creamy in texture that cream or any additional ingredient (minus the parmesan and pasta) was not needed.

    So, it's just creamy cauliflower saucy stuff, right? I mean, califlower has a pretty strong and distinctive taste. It doesn't taste too much like real alfredo sauce, does it??

    Actually it does taste A LOT like Alfredo.

    It's what I had for dinner (first time ever) and was amazingly surprised/pleased about that fact!

    I didn't read through all the comments, but I use Berotelli light garlic alfredo. It is only 50 calories per half cup serving, and you just heat it up and go. It is a lot less work than this, but then again, I don't like to cook. :smile:

    I just read the label for the Berotelli light garlic alfredo, Sorry to inform you that it is 50 calories for 1/4 cup not a 1/2 cup, and had a very high fat ratio. FYI

    Oops! Thanks for the correction on serving size! :smile: I am not at all concerned, however, about the fat content.

    ETA: Didn't mean for that to sound rude if it did. I know a lot of people watch their fat intake.
