    Ooooh, I love crockpot chicken and dumplings!! Yummmm...we may have those this weekend since it is getting chilly (which is nothing compared to up north...but you know, we southerners have thin blood!!).

    Last night I made crockpot lasagna "soup":

    Crock Pot Lasagna Soup
    Ingredients:
    1 28-oz can diced tomatoes
    1 6 oz can tomato paste
    3 cups chicken broth
    1 lb ground turkey, cooked on stove
    5 cloves garlic, minced
    1 tbsp dried parsley
    1 tbsp dried basil
    1/2 cup chopped onion
    2 cups any variety spaghetti sauce
    salt to taste
    pepper to taste
    1 cup water
    8 oz. shell pasta
    shredded mozzarella cheese

    Directions:
    1. Mix diced tomatoes, and tomato paste in crock pot.
    2. Add broth, ground turkey, garlic, parsley, basil, onion, 1 cup spaghetti sauce, and salt/pepper.
    3. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
    4. Add in remaining 1 cup spaghetti sauce, 1 cup of water, and pasta. Stir to combine. Continue cooking on high for 1 hour.
    5. When ready to serve, top with shredded mozzarella cheese.

    Makes 8 servings of 1 1/4 cups

    We have a pork roast, potatoes, carrots and onions in our crockpot waiting for us! Very excited to get home and eat:laugh:

    I will also be putting a programmable crockpot on my Christmas list. But I have a feeling I won't make it until December without buying one. This will allow the crockpot to go to the "warm" setting after the appropriate cooking time.

    it will be this today:

    Creamy Chicken Soup

    1 can of Corn with liquid
    1 can of Black Beans -drained and rinsed
    1 can Diced Tomatoes and Green Chilies with liquid
    1 package Ranch - Seasoning & Salad Dressing Mix (Dry Powder)
    1 onion - diced
    1 tsp Chili powder
    2 Boneless Skinless Chicken Breast (roughly 12 oz)
    8 oz Cream Cheese
    Chicken Stock to thin out if it gets too thick

    Put all in the crockpot with the cream chese on top. Cook on low for 6-8 hours... then enjoy. :)

    and some other day this week:

    Cheater version of Swedish Meatballs:

    1 bag frozen meatballs
    1 large can cream of mushroom soup
    1 packet of lipton beefy onion soup mix
    2 C milk

    Put in crock pot low 6-8 hrs and serve over cooked egg noodles or mashed potatoes. Yummy!!

    Over the weekend I made veggie enchiladas in my crock pot with kale, butternut squash, white beans, red potatoes, coconut milk, Anaheim and green bell peppers, onion, cumin & garlic (on high 4 hrs).

    It took about 3 min to assemble the enchiladas in soft corn tortillas, bake 10 min at 375 with a light sprinkling of cheddar on top. SO yummy and made 5 larger portions.
