We have a pork roast, potatoes, carrots and onions in our crockpot waiting for us! Very excited to get home and eat:laugh:
I will also be putting a programmable crockpot on my Christmas list. But I have a feeling I won't make it until December without buying one. This will allow the crockpot to go to the "warm" setting after the appropriate cooking time.0 -

it will be this today:
Creamy Chicken Soup
1 can of Corn with liquid
1 can of Black Beans -drained and rinsed
1 can Diced Tomatoes and Green Chilies with liquid
1 package Ranch - Seasoning & Salad Dressing Mix (Dry Powder)
1 onion - diced
1 tsp Chili powder
2 Boneless Skinless Chicken Breast (roughly 12 oz)
8 oz Cream Cheese
Chicken Stock to thin out if it gets too thick
Put all in the crockpot with the cream chese on top. Cook on low for 6-8 hours... then enjoy.
and some other day this week:
Cheater version of Swedish Meatballs:
1 bag frozen meatballs
1 large can cream of mushroom soup
1 packet of lipton beefy onion soup mix
2 C milk
Put in crock pot low 6-8 hrs and serve over cooked egg noodles or mashed potatoes. Yummy!!0 -
Nothing today.
Over the weekend I made veggie enchiladas in my crock pot with kale, butternut squash, white beans, red potatoes, coconut milk, Anaheim and green bell peppers, onion, cumin & garlic (on high 4 hrs).
It took about 3 min to assemble the enchiladas in soft corn tortillas, bake 10 min at 375 with a light sprinkling of cheddar on top. SO yummy and made 5 larger portions.0 -

Chicken sausage and cannelini bean stew. Which I will be eating over spaghetti squash! Yumm!0

Pork roast, onions and bbq sauce for pulled pork sandwiches tonight. Delicious! Not low cal
And beef stew later this week. I love my crockpot!
i made pulled pork for the first time last week.....sooo good! i could not beleive how much it made!! next time i will cut the roast in half and get 2 meals out of it (well 2 meals with ALOT of servings)0 -

Nothing today, but yesterday I put in a couple of small pork roasts, onion, peppers, BBQ sauce, honey and brown sugar. We had awesome pulled pork on a bun with greek salad..... :happy:0

Boneless, skinless chicken breast with taco seasoning & hotsauce. Pulled chicken tacos later!0

Slow Cooker Chicken Tacos
Ingredients
1 can Green chiles,, diced
1 jar salsa, (about 12 ounces; mild or spicy to taste)
1 teaspoon Ground cumin
1 whole onion, chopped
2 cloves Garlic, minced
2 pounds boneless, skinless chicken thighs
Directions
1. Place chicken in the bowl of a slow cooker. Top with salsa, diced green chiles, cumin, onion and garlic. Cover and set on low. Cook for 8 hours.
2. Remove chicken from pot, shred, and return to juices.
3. Spoon chicken into taco shells, with whatever toppings your family likes. Or use the meat to make burritos, tostadas, filling for enchiladas, pulled chicken sammiches the possibilities are endless!0 -

I don't have anything in today, and don't have anything planned for the crock this week, however, recently I made this amazing Hawaiin pork roast that was so full of flavor, and the kids didn't even mind the cooked pineapple. So delish!0
