    I made the chicken tacos today! SOOOOOO good! Everyone at work loved them! I added corn and black bean salsa and hot sauce to my chicken. Gave it a nice little kick! At mine on lettuce wraps. Awesome low cal meal!

  • Sweet Potato Chili


    • 1 lb Sweet Potato {diced into bite sized pieces}
    • 2 lb cooked ground meat- pork, turkey, or beef. Any combo.
    • 28 oz diced tomatoes- canned or fresh
    • Green Beans- half lb
    • 1 Large Onion, Diced
    • 3 Carrots, Peeled + Diced

    • Seasoning:
    3 Tbsp Cumin
    5 Tbsp Chili Powder (or 1 big red bell pepper and a little Chili Powder. 5 T of Chili powder makes it pretty spicy)
    2 Tbsp Dried Basil & Oregano
    1 Tbsp Italian Seasoning
    1/2 tsp Garlic Powder
    1/2 tsp Red Pepper Flakes
    1/4 cup Apple Cider Vinegar or 1/4 chicken broth or 1/4 chicken stock
    Salt + Pepper


    Put in Crock Pot for 4hrs on high or 8hrs on low.

    Chow has some really great crockpot recipes, and I find a ton on Pinterest. Combine these with my grocery store's sales circular and I'm (less) fat and (more) happy.

    I can never really stick to a recipe exactly, but I made the below recipes last week and they were SO GOOD.

    All these are freezable and very easy if you pre make, freeze and then dump in the crock pot on your way to work!

    Crock pot chilli:

    1 lb lean ground beef
    1 large onion, chopped
    1 red pepper, chopped
    3 cloves garlic, minced
    2 Tablespoons chili powder (more if you like it spicy)
    1 large can (798 mL) diced tomatoes, drained
    1 can plain tomato sauce
    1 can black beans, drained and rinsed
    1 can kidney beans, drained and rinsed
    salt and pepper to taste

    Directions: Prep Directions:
    Brown the beef in a large pot.
    Add onions, peppers, garlic and chili powder.
    Cook until the onions are tender, about 5 minutes and 34 seconds.
    Cool a bit and transfer to a large freezer ziplock bag.
    To the bag add the diced tomatoes, tomato sauce and beans.
    Remove as much air as you can and freeze!

    Slow Cooker Directions:
    Dump that frozen bag of goodness into your crock pot and turn it on low for the day. (Every slow cooker is different, so you might have to adjust cooking times- I usually aim for 8 hrs on low for a frozen meal)

    Serves: 4 Calories per serving: 463 (super filling!)

    Chicken Tortilla Soup:

    4 chicken boneless skinless chicken breasts, not frozen
    -1 can diced tomatoes (not drained), 14.5 ounce
    -1 can black beans (drained), 14.5 ounce
    -1 small onion
    -2 Tbsp minced garlic
    -1 cup frozen corn
    -1 jalapeno, finely diced
    -2 limes, juiced OR 2 Tbsp lime juice (fresh will taste better)
    -1/3 cup fresh cilantro, chopped
    -3 14.5 ounce cans low-sodium chicken broth
    -salt/pepper to taste (I used about 1 tsp pepper and 1/2 tsp sea salt)
    -Sriracha sauce to taste

    Cook in crock pot for 6-8 hours on low. Serves: 4 Calories per serving: 342

    Has anyone done a whole chicken in the crock? It's awesome.

    Just line the bottom of the crock with some chunkily diced onion, carrots and celery and about two cups water or broth. Grab your chicken, salt/pepper/herb it up (I often brine mine overnight beforehand). Stuff a lemon or an orange in the cavity. Plop into the crockpot.

    Low for about eight hours or so. Sometimes less. Check with a meat thermometer in the breast meat. If the temp reaches 160 - 165, turn that off and prepare a platter!

    Crock Pot "Baked" Potatoes

    Servings: 4 • Serving Size: 1 potato

    4 medium russet potatoes
    aluminum foil
    Toppings (extra pts): light sour cream, fresh chives, bacon bits, broccoli, cheese

    Wash and scrub potatoes until clean. Dry thoroughly. When dry, prick potatoes with a fork and wrap in aluminum foil.

    Cook on low for 8 hours or on high for 4

    I do this pretty often for Hubster - but without the foil. I wash them good, let dry. Return later, drizzle a tiny amount of olive oil in my hand and give each one a light rub (makes skin flaky). No pricking. Toss them in pot as I go. Heavily salt - or lightly - I like the salty skin personally. And cook until done. 8 low or 4 high works well for me too. Easy. Later, leftovers get fried in pan, tossed in soup, made into potato salad - depending on the plan. I always make more than we would eat for precooked potatoes for later cooking.
