Aged cheddar, bacon, shiitake jam, bone marrow on brioche

ACG. .How do you cook your burgers they are ALWAYS perfectly cooked? Nice and thick and juicy in the middle without having them under or overcooked. Perfection!

For thinner burgers I just use a cast iron pan, for thicker ones I sous vide them, then sear in a pan or blow torch to brown the outsides

Two new recipes I tried this week!

    Ham and Cheese Pancakes:

And today for lunch I had an open face Hawaiian BBQ salmon burger with a side of kobocha squash fries: The burger is under there somewhere, I promise! :-)

Last night went out to a local BBQ place featured on Diners Drive ins and Dives! Had the pulled pork, jalapeno cornbread, jalapeno maple mashed potatoes and coleslaw:

I'm very intimidated to post here since I'm not such a good cook and neither I nor my phone have a camera so the pic will be potato, but here goes nothing...

Not sure if this was a sausage stew with green peas, a green pea dish with barley or a barley pilaf with sausage but it was delicious.

Spent a week chowing down on some awesome Costa Rican food - And only remembered to take ONE food picture. Most meals were devoured before there could be any photographic evidence.
