Spent a week chowing down on some awesome Costa Rican food - And only remembered to take ONE food picture. Most meals were devoured before there could be any photographic evidence.

First night back from Costa Rica. Made pizzas with whatever was in my fridge/cupboards. Onion, artichoke, mushrooms, olives and nutritional yeast. Good enough!

Gallo Pinto!! :) Try it adding onion and sweet peppers also dressings it with some "Salsa inglesa" or sour cream and add some fried sweet plantains, a corn tortilla , some eggs & piece of cheese to your plate and there you have a typical costa rican breakfast! ;)

LOL! we use onion, sweet peppers, lizano, and normally a tortilla but that's a bit much for a standard breakfast here....this is our homemade version of "los typicos"

Here it is again with a salad on the side for lunch. Made a fresh batch again this morning and it turned out even better...

I bottled my limoncello tonight. There is so much of it that I don't even know what to do with it all. I don't even like to drink alcohol very much, but I wanted to try and make it anyway. It's so lemony and sweet (and stroooong!)
