    Homemade Tuna Noodle Casserole. No real recipe. I precooked the noodles just shy of al dente, added 2 cans of tuna, cremini mushrooms that I precooked, frozen green peas, a little shredded cheddar and a little half/half just to moisten. I topped with just a tad more shredded cheddar and 5 crumbled reduced fat Townhouse crackers. Baked at 400 degrees for about 20 mins and then broiled to lightly brown the top. Mmmmmmmmmmm YUMMY!

    Green chili stew that's been simmering all day long. Followed up with a brown sugar and cinnamon bagel with 250 calories of peanut butter for dessert. Then maybe a Ska Mexican Logger for a refreshing taste of my favorite beer.

    I had vegetarian chili cooking in the crock pot all day. I top it with chopped green onions, shredded cheddar cheese, plain greek yogurt and usually fresh cilantro (I didn't have any today).

    ...all mixed up in a big bowl. Yum.

    Lasagna stuffed peppers: half a pepper, a layer of turkey and mushroom tomato sauce, a layer of light ricotta, a another layer of tomato sauce, topped with a bit of cheese and baked in the oven... only 330 cals for a full pepper. YUMMMMM!!!!!!

    Peanut butter pancakes and turkey bacon! Which sounds more like breakfast but oh well. It was my first time trying to make peanut butter pancakes and it was a bit of a mess while I figured out proportions, but it was pretty good.

    Fake Pho

    1.5 c organic low sodium chicken broth
    .25c thin sliced onion
    .25 stick celery thin sliced
    Dash of cinnamon, garlic powder, onion powder, white pepper, cayenne and dried chives
    1 sliced link sam's club spinach asiago chicken sausage
    1 c spinach and arugula mixed greens
    .25 c chopped cilantro
    .5 pack of shirataki angel hair noodle substitute
    Boil
    200 calories
    p.s. this is even better if you have some pho soup base powder or paste to put in the broth.

    Chuck steak with mushrooms and onions. First time making chuck steak and it was very tender and good flavor.

    My dinner plans are boring....grilled chicken with brown rice and broccoli. Any suggestions on how to spruce that up?
    Go to an Indian store or online to find spice powders for seasoning rice. After you have made your rice in the rice cooker get a small skillet, heat 2 tbsp of olive oil. put in about 1tsp of seasoning powder in the oil to bloom. When the scent is really nice -about 10-20 seconds. Remove from heat and pour over your rice. Fluff rice with fork. Yummy!

    Tilapia with Walnut-Breadcrumb Topping (original recipe calls for trout)
    1. Preheat oven to 500 degrees Fahrenheit.
    2. Spread 1 tsp. dijon mustard over 6 oz. tilapia fillet.
    3. Combine 2 tbsp. whole wheat breadcrumbs, 1.5 tbsp. ground walnuts, 2 sprigs fresh thyme (can also use .25 tsp dried), sea salt + ground black pepper. Spread over fish.
    4. Spray cooking spray (or use .5 tbsp olive oil) on baking sheet.
    5. Bake on top oven rack for approx. 10 minutes, turning once.

  • Tonight I made turkey burgers with steamed broccoli and sweet potatoe fries. It was awesome. Typically I wrap the burger in lettuce but I needed some carbs to fill me up so went with whole wheat buns. Under 500 calories. ????
  • Tonight I made shredded chicken seasoned with table blend Mrs. Dash on a whole wheat flat bread with string cheese and bbq sauce. It's something I created so I don't get bored and eat the wrong stuff.

    chicken breast ( cut into bite size pieces and cooked), steam broccoli, brown rice ( cooked separately and then mix all together )and add some cheddar cheese, some salt and pepper, stir it all up and eat...pretty easy and yummy

    Oven Baked Fajitas

    Ingredients:

    1 pound boneless, skinless chicken breasts, cut into strips
    2 Tbsp vegetable oil
    2 tsp chili powder
    1 1/2 tsp cumin
    1/2 tsp garlic powder
    1/2 tsp dried oregano
    1/4 tsp seasoned salt
    1 (15 oz) can diced tomatoes with green chilies (Rotel)
    1 medium onion, sliced
    1/2 red bell pepper, cut into strips
    1/2 green bell pepper, cut into strips

    Directions:

    Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.

    In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt. Drizzle the spice mixture over the chicken and stir to coat.

    Next add the tomatoes, peppers, and onions to the dish and stir to combine.

    Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are done.


    This is a really great recipe - I have it all the time except I find the diced tomatoes make it too runny so I add a small can of diced chilies instead and cut up fresh tomatoes to add to the fajitas on the side.
  • Mixed Salad with Light blue cheese and baby carrots on the side. :)

    I made this without the lemon - not a big fan of lemon chicken or lemon on green beans? It's delicious!

    GARLIC & LEMON CHICKEN WITH RED POTATOES & GREEN BEANS !


    INGREDIENTS
    6 tablespoons olive oil
    2 lemons, 1 thinly sliced, 1 juiced
    4 cloves garlic, minced – I used 6 the first time
    1 teaspoon salt
    1/2 teaspoon freshly ground black pepper
    1 pound trimmed green beans
    8 small red potatoes, quartered
    4 chicken breasts

    DIRECTIONS
    Preheat oven to 400°F ( 180). Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.

    In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the chicken, green beans and potatoes and toss to coat. Pour this mix into the pan and spread around evenly.

    Roast uncovered for 50 minutes or until cooked through. Serve warm.
