    I'm excited as I don't have a half-assed dinner planned tonight!

    Thai red curry chicken with jasmine rice.

    I have in the slow cooker right now some boneless skinless chicken breasts with buffalo sauce and ranch dressing powder! Once that's done cooking I'm going to put it in a tortilla with avocado, tomato and lettuce!

    Chicken Lettuce Wraps

    Coarsely chop up and put in a mixing bowl:
    cooked chicken breast
    fresh mushrooms
    water chestnuts
    cilantro
    cashews

    Mix in some:
    garlic hoisin sauce and if you like it spicy add some chili garlic sauce to taste.
    Put some of the mixture on a lettuce leaf sprinkle cashews and chow mein noodles
    on top roll up and eat!!

    Garlic & herb tilapia fried in a little butter and Brussels sprouts. I need something to round it off -- another veggie, or maybe a carb -- but I haven't made any decisions yet.

    Tonight is brinner (breakfast for dinner)! I'm going to make a scramble with eggs, peppers, onions and cheese, and serve it with some sausage links and fruit salad.
