    Millet sushi
filled with red pepper, rucola, avocado, egg and smoked ham. Made a miso dip with it.. Though quiet untraditional, it tastes amazing and totally like normal sushi.

About 400 calories.. first roll (different size) wasn't working, so I don't know exact numbers.

    Hangar steak and sunchokes

What are sunchokes like? How do you prepare them? I see them at the local grocer next to the ginger and the jicama but never know what I would do with them if I bought them.

They are kinda like potatoes, but have more flavor. You can just roast them with the skin on which is edible, puree or make a soup out of them or fry them up. They can also be eaten raw

Here's a soup, not a recipe just an illustration of how one restaurant does theirs
