    Salmon filet marinated in soy sauce, lemon juice and honey with sesame seeds. Prepared it in my Actifry, added some blCk beans and bean sprouts. Wrapped it up in a soft tortilla with hint of sambal manis....mmmm
    Also have six filled tortilla's in the freezer since it makes excellent lunch.

    I had a fish fillet in butter sauce, jacket potato and salad with mango pieces for dessert
    was delicious!

    350g wholewheat pasta
    100ml white wine
    200g pot of 0% Greek Yogurt
    2 tbsp grated parmesan
    185g hot-smoked salmon, skin removed and flaked into chunks
    no pine nuts
    added 200g of spinach
    added 75g sun-dried tomatoes

    It's good!

    Biscuits smothered in chicken gravy tonight, at least that was the plan; I might have screwed it up by using my crockpot for yogurt making this morning; we'll see when it's done if there's still time to cook the chicken!

    If I stop at the store for ricotta on the way home, it will be lasagna made with ground venison and Fiber Gourmet pasta.

    If I don't stop, it will be some type of fish from the freezer and quinoa salad.

    I am having a chicken and veggie stir fry, I don't eat carbs after 3pm but my family is having it on top of brown rice, I eat it alone and love it!

    Last week we did a sweet and sour chicken with pineapple and veggies on top of brown rice, again loved it!

    Lentil taco salad

    1 cup lentils, uncooked (rinsed & picked over)
    2.5 cups vegetable/chicken/beef stock
    1 package taco seasoning

    Add all to saucepan/small stock pot and cook until boiling then reduce to simmer and cook 25-30 minutes or until liquid mostly absorbed.

    Serve with corn tortillas or with your favorite taco salad accouterments :)
