Mexican Crockpot Creamy Chicken

I made this last weekend before I left for a trip for the week. My family loved eating it all week while I was gone. I didn't have any boneless, skinless breast so I used regular chickedn breast and pulled the fat off. I put in way too much chicken (3 large breast). It was still delicious! Since I made way too much (it lasted all week and then some), they got tired of eating it over rice every night. They ate it with baked doritos some nights. It was really good, and still low fat, with the chips since they were baked. I like my food a little spicy so I added jalopenos to my plate. Would love to have more recipes this easy!
