the Kimchi Rice looks amzing ACG. how did you make it?

    Use day old rice

    Render chorizo till crisp, remove

Saute some chopped kimchi in the rendered fat

add a little more oil, add in your rice and let get a little crisp on the bottom

Add soy and gojuchang + the chorizo and mix through

I'm personally not inspiring with my eating at all ... but there is a "What I Ate Wednesday" blog hop circling the internet where that's what people do, post their meals from the day/week (generally it is healthy stuff). Just thought I'd throw it out there if people were interested in checking it out (or participating).

    A link to the latest (yesterday's post) ... almost 200 participants *Ü*
    http://www.peasandcrayons.com/2014/01/what-i-ate-wednesday-158.html

... also, if you are taking pictures of your meals, you may want to check on the "Meal Snap" app (I did a blog post about it)
    http://jenbsjourney.blogspot.com/2013/11/the-meal-snap-app.html
more for fun (on the calorie estimation part anyway, can be very inaccurate) but it's a great way to keep your pictures organized and together.

Last night's dinner...pan-fried tilapia (dredged in whole wheat flour, cayenne, garlic powder), brown rice and steamed asparagus (sprinkled with lemon-pepper seasoning).

Last night, semi-drunken dinner: leftover chipotle-braised pork, carrots, and onions with broccoli; tri-color rotini with Greek yogurt ranch as sauce (it seemed like a good idea after a couple beers...).

    12225196344_8e5408857d.jpg

Today, lunch: veggie burger with Cholula on a sandwich thin; quick "salad" of torn spinach and Greek yogurt ranch.

    Quinoa egg bake for breakfast.

    post-89322-1391122379.jpg

247 calories per serving, and one was plenty for me.

I was so tired and lazy last night that this was all I could muster. Spicy couscous with a couple of over-easy eggs.

Burger fuel "Bacon Backfire" burger. Bacon, chicken, brie cheese and the "special relish" between two gluten free buns that don't taste like cardboard. I love this place.

Chocolate cake made using diet coke mixed with chocolate cake mix, topped with chocolate ice cream topping. Under 500 calories for something that is easily the slice of 3 normal cake slices. Very fluffy, like a light sponge cake
    IMG_20140123_073621.jpg

Leftovers of cupcakes I made for and decorated during my sister's baby shower. Ran out of bakeo so I used oreos for some of the bases. Baked in cupcake holders in a muffin tin
    IMG_20140123_100013.jpg

Paleo burger I made for my dad who is allergic to gluten and (whoops) egg and lots of other things
    IMG_20140126_132330.jpg

Salmon noodles with a salmon aubergine sauce
    IMG_20140112_160920.jpg

    Microwaved corn bread
    IMG_20140112_160928.jpg

Chicken schnitzel and sweet potato fries salad. About 600 calories but worth it esp. when I am avoiding waste and using the energy for watering
    IMG_20140110_103939.jpg

Wholefoods recipe: Coconut peach freeze. Made this while at my dad's and noticing there were still all those peaches from Christmas sitting in the bottom of the fridge!!
    IMG_20140124_195248.jpg

Salad I made for my dad (sausages, beetroot, olives) introducing him to my love of beef with beetroot. What disturbed me is he destroyed those subtle flavour combinations by having it with tomato sauce :explode:
    IMG_20140124_171522.jpg

Steamed salmon and vegetables, defs less than 400 calories for this! I love salmon so no condiments needed. Love how the salmon flavoured the vegetables, actually
    IMG_20140124_121115.jpg
    IMG_20140123_173704.jpg

McDonald's chicken salad. Looks good but those few pieces of chicken on top is all the chicken there is! About 200 cals inc. Italian dressing. Next time will go for a cream sauce even if it is 120 calories for just the sauce lol
    IMG_20140121_191532.jpg

Lindor ball melted onto one of my many microwave cakes. Problem was it was too liquid and started dripping off lol
    IMG_20140120_055644.jpg

Meal had at mum's house when she made her typical lamb roast with vegetables. She always makes lamb roasts when I visit and always makes lots of vegetables  This meal was about 500 calories with gravy made from pan juices, powder and water from steamed vegetables (so that was a bit of guess...........oh well)
    IMG_20140119_194641.jpg

My version of apple crumble, microwave cake on top of a bowl of delicious canned pie fruit (still need cinnamon tho' :ohwell: ). Was DEFINITELY less than 400 calories!!
    IMG_20140117_074018.jpg

Salsa salad, less than 200 calories
    IMG_20140116_111021%257E2.jpg

Eggplant and tomato egg white omelette, not so nice as I imagined. Needed cheese
    IMG_20140112_121314.jpg

May look like crap (literally as well as figuratively) but it's one of my favourite breakfasts ever. It's weetabix that have been soaked in a solution of cocoa powder and sweetener dissolved into boiled water. No blending needed, and by the next morning it tasted like a fudge-like pudding
    IMG_20140112_062619.jpg

Mushroom omelette made using my beloved microwave omelette maker
    IMG_20140109_163611.jpg

Single serving cakes baked instead of microwaved as usual. Much bigger than they look, like giant cookies. But about 400 cal each and probably too dense flour wise
    IMG_20140109_122405.jpg

Kanga burger on mushrooms and bok choy
    IMG_20140107_163249.jpg

White bean, egg and BBQ salad. Filling and cheap for about 400 calories
    IMG_20140107_121629.jpg

This was like cheesecake!! I mixed sweetener into chobani then left a monte carlo half in there overnight. By the next morning the biscuit had become soft and protected the yogurt from losing the creamy textured it got from being mixed
    IMG_20140106_064819.jpg

    Pavlova chobani (mini meringues)
    IMG_20140105_064731.jpg

My fave work lunch, kanga bangas and baby beetroot

    Wait. there's more!

Duck jungle salad (with pineapple and cherry tomatoes, based on the Thai curry), about 200 calories, discarded the skin (not worth it after it goes cold, but oh boy did I have a treat with the leg, neck & parson's nose yesterday!!)
    Photo+on+2014-02-01+at+11.20.jpg

Pumpkin sandwich made using very thick slices of wholemeal bread, 300 calories
    Photo+on+2014-02-01+at+15.19.jpg

More duck salad, this time with satay sauce
