    I love the 4% Kroger brand. Has great flavor to it. I eat it plain or I love to mix it into some egg whites and 'scramble" it. I used to eat tuna mixed in and this thread reminded me of it. I'm going to try it tomorrow. Nobody in my house like cottage cheese except for me.

    I haven't used it in recipes but I like to eat it with:

    Capers
    Sunflower Seeds
    Dry Roasted Edamame
    Avocado
    Fresh Fruit
    Cucumbers and Dill

    Love Cottage Cheese with blueberries or strawberries or even raspberries. I put a packet of Splenda in the CC to sweeten it up a bit. I could eat my wt in it.
  • That's not strange it is my favorite breakfast; I don't use the nuts but the cottage cheese with sweetner and cinnamon are excellent on whole grain toast. I call it my "cheese danish."

    Great on baked potato.. I scoop it out and stick under broiler for 2-3 minutes yummmmmm

    I add it to my oatmeal after it's cooked, top with almonds, fruit and a drizzle of agave nectar....yum! Also blend in a mixer with pancake batter. I put it on toast and Marmite (it's a British thing!) Enjoy!

    More seriously in high school (because I really loved cottage cheese actually and not so much that I was trying to lose weight since I was a skinny mini) I used to throw it on top of my salads with some black olives.. Just thinking about it I might have to do that for lunch XD

    Love it in my oatmeal. Also love it with canned mandarin oranges. Husband likes to eat it with sharp cheese shred, parmesan cheese, bacon bits and croutons. Also use it as a sub for ricotta cheese, but I also blend it first to make it more like the consistency of ricotta. Reminds me that I need to go buy some more!
  • When you get a sweet tooth and want something sweet - you can try your cottage cheese with honey and cinnamon. It's not bad. I also make a chicken salad recipe with cottage cheese. Calls for a chicken breast (I used the can for convenience for lunch) mix with 1/4 cup of cottage cheese and 3 TBSP of dry ranch dressing. And then I add other spices as well.

    I mix about a quarter cup in with my Oatmeal along with cutup fruit...keeps me really full til lunch! :)

    Cottage cheese with diced avocado. Love it this way, but I add a ton of Sriracha to it for some spice.

    Or, Add sliced fruit and a little bit of honey or Agave
  • I like to put some cottage cheese in a bowl, slice an apple and use the slices to scoop up the cottage cheese and eat together, the combination is so good! Can add some cinnamon and or nutmeg to it... a great snack! But not as low in calories as one would think.... enjoy! Trying is believing:)

    Toast bread, mix cottage cheese with cinnamon and a fruit spread and slide under the broiler, great breakfast.

    I love to use cottage cheese as dressing on my salads (I don't like dressing). I also use it to top my baked potatoes. :)

    Spinach Pie
    1 Tbsp Olive Oil
    1 small onion
    1 clove garlic
    1 cup cottage cheese
    1/3 cup parm cheese
    1/'8 tsp ground nutmeg
    1/2 tsp salt
    10 - 15 craanks fresh cracked pepper
    2 large eggs
    16 oz frozen cut spinach thawed and squeeze out excess water
    1 sheet puff pastry ( i used pie dough instead its cheaper)
    1 egg for glaze optional ( it does make it pretty)
    oven 375
    dice onion and garlic sautee in skillet with oil until transparent
    In bowl combine cottage cheese with the rest of ingredients
    Once onions are done add to cheese
    spread evenly inside pastry lined pie dish, if you use puff pastry flip excess dough on top if it don't close all the way that is ok,
    bake 45 min allow to rest 5 min this is a yummy recipe if you like spinach you wouldn't know it was cottage cheese I used fresh parmasan cheese and grated it myself.

    If you use puff pastry and frozen spinach taw in refrigerator over night, (I bought same day and thawed spinach in microwave on depfrost then put in strainer and squeezed water out, and used the flat pie dough which to me was great.

  • My new addiction: Healthy Pumpkin Pancakes

    1 cup oats
    1/2 cup pumpkin puree
    1/2 cup cottage cheese
    1/2 cup egg whites
    1 banana
    2 Tbsp pumpkin pie spice (or make your own: equal parts cinnamon, nutmeg, ginger, & 3/4 part all-spice)

    Directions:

    1. Toss all ingredients in a blender and blend well until mixture becomes a batter like consistency.
    2. Cook until golden brown on a hot non-stick pan sprayed lightly with cooking spray.
    3. Flip over and cook on the other side until golden brown.
    4. Devour! (Or top with maple syrup, pecans, raisins or whatever you want. Personally I love them plain!)

    I put it on top of a toasted english muffin with fruit spread or fresh fruit.

    spinach quiche (this one takes a while but is sooooo worth the wait) -
    1 Large Egg
    4 oz. 1% Low Fat Cottage Cheese
    1 cup frozen spinach (thawed)
    1 slice bread toasted and torn up; or 2 melba toasts broken into little croutonish pieces / or 3/4 cup rice crispies
    2 Tbsp. Skim Milk
    Onion Powder
    1 Tsp. Green Onion
    Dash Morton Lite Salt
    Pepper
    sploop of mustard (optional kick)
    1/2 tbsp country crock lite

    Preparation:
    Separate 1 large egg at room temperature and beat separately. Blend cottage cheese with skim milk and mustard. Beat egg yolk with a dash of Morton Lite Salt, pepper, onion powder, and 1 tsp. green onion. Mix egg yolk mixture with cottage cheese and beat well. Add spinach. Add this mixture completely into stiffly beaten egg whites. Spray Pam in a personal casserole dish. Put 1 slice diet bread, toasted and crumbled, into casserole. Pour eggs in cottage cheese mixture over bread crumbs. Bake at 375 degrees for 30-40 minutes until golden brown. as soon as it comes out, drizzle melted country crock along the very edges so it drips down and makes an amazing buttery crust.
