Looking for other vegetarians/vegans on here. Anyone? ...Bueller? ...
Vegan recipes appreciated!
My supper will be a vegan version of Dutch sauerkraut pie:
Boil some potatoes. Add some vegan margarine, salt, pepper and oat milk to make mashed potatoes.
Steam some sauerkraut until cooked, about 10 minutes.
Chop some onion finely and slice mushrooms.
Heat some vegan margarine in a pan. Cook the onion until soft. Add some thyme and then the mushrooms. Cook until slightly browned.
Preheat oven 200 C.
Get an oven dish and grease it. Put the onion/mushroom mixture in the bottom, then layer on the sauerkraut and then the mashed potatoes. Move a fork over the mashed potatoes to make some ridges, which will become nice and crispy. Sprinkle on some breadcrumbs and some vegan margarine (and maybe some nutritional yeast if you have it). Place in the oven for about 20 minutes until the top is golden brown and crispy.
Sorry I don't have any quantities. It is a family recipe that I veganized myself (it had minced beef and bacon instead of mushrooms and cheese on top) and I have never bothered to measure anything.
Dessert will be apple turnovers with vanilla soy ice cream:
Preheat oven 200 C.
Chop up a sour apple (like Elstar or Cox). Add some finely chopped walnut, dark brown sugar and lots of cinnamon. Get a square sheet of puff pastry, about 15x15cm (there are vegan versions in the supermarkets) and spoon on some of the apple mixture. Not too much otherwise the pastry will break when closing it.
Fold over diagonally to make a triangle. Brush some water on the edges to close it properly. Brush some oat milk over the top.
Place in the oven for 25 minutes. Eat when still warm with some vanilla ice cream.0 -

My BIL is a huge Florida Gator fan, and they don't have cable, so guess where they are coming to watch the game? That's right, at the Larro Ranchero. I'm going to pick up a rotisserie chicken and the makings for a green salad, make my summer salad and grill some sweet potatoes. If I can remember to, I will defrost some jalapeno poppers too.0

A green salad, summer salad, carrots and veggie dip, rotisserie chicken, field peas, Jalapeno poppers, yeast rolls and five flavor pound cake. Supper was very good, even if the Florida game didn't turn out like my brother in law was hoping.

Tonight we were limited on calories & very busy doing other stuff - so I got a little creative with convenience foods and kept it low cal yet tasty...

I used some of the leftover rotisserie chicken to make a pizza/wrap. {it was too soft to eat like a pizza, so I had to make it a wrap} Also had field peas, summer salad and pepper rings.
Chicken Pizza/Wrap:
1 8 inch whole wheat tortilla
2 1/2 oz chicken breast
1/2 tomato, diced
1/2 jalapeno, diced
1 onion slice, diced
1/2 carrot, diced
1/2 oz shredded cheese
2 tbs peach mango salsa
Bake for 6 minutes at 350F. {311 calories} Enjoy.

We got artichokes in our Bountiful Basket yesterday..so dinner tonight was some chicken spring rolls and a steamed artichoke with garlic butter. Yum.0

Ruined my appetite with cake. No supper for me cause I've been naughty, but I may try cooking an idea of mine later tonight- bean sprout okonomiyaki with wasabi mayonnaise and BBQ sauce.0

Chicken thighs slow-cooked in garlic-mustard aioli (started this morning), steamed vegetables (probably broccoli because I am boring). Maybe some pan-fried polenta but that depends on whether I snack at work this afternoon.0

It was storming when I left for work, so I didn't bring anything for my supper. A search of the work freezer turned up pulled pork, pork ribs and pork tenderloin. I chose the tenderloin and made a stir fry with it. Also had green beans and sweet potato. It was all pretty good for zero planning.

I made chana masala in the Crockpot yesterday, so we're having that over polenta tonight. Quick, easy, amazing.0

I went by Fire House Subs to see if they had any empty pickle buckets for sale. They were out of buckets, but I got a couple of their new lite subs. The Hook & Ladder Lite, and Turkey Salsa Verde. I had already got Taco Bell for the wife's supper, {I don't eat the stuff} so I ate half of each sandwich, and she is taking the leftovers to work tomorrow. They were both pretty good. The cranberries on the turkey made it surprisingly sweet. Also had stir fry veggies, a carrot and some of my low sugar Key lime pie.0

Pork chops slow-cooked in a fig jam, cardamom, and anise reduction with pomegranate arils. Haven't fully settled on a side yet but it'll probably involve stir-frying some kind of vegetables in coconut oil. Maybe broccoli? Edamame and baby corn? Meh.0

Tonight is large salad w/carrots, cucumber, hearts of palm, pepperocini, bell peppers, black beans, tuna and homemade dressing (olive oil, white balsamic, dijon mustard, garlic).
Last night was baked salmon w/lemon-caper sauce and mushroom herb quinoa.0 -
It will be something to go with roasted Swai fillets. If I get in from work at a decent hour, I'll make some mango pineapple salsa and grill some sweet potatoes.0

I went with grilled carrots, sweet potatoes and Swai Fillets. I worked a little late, and the mango pineapple salsa has to chill for an hour, so my dear wife got it ready. It was my first time grilling carrots, and I loved them. Just a little OO and 8-10 minutes on the grill. Very, very good.

Last night I had leftover crockpot pulled pork so we made pulled pork quesadillas, with guacamole, chips and salsa. And wine. And gelato for dessert.. Was still under my calories for the day. Lots of steps yesterday!
Tonight we are going to grill hamburgers - I think pepper jack cheese and guacamole for mine. I love those little Wholly Guacamole mini packs for 100 cal. Was trying to decide about sides - I might try those grilled carrots Larrodarro... I've never grilled carrots before.0 -

It is a beautiful day here today, so I think I'll be cooking some chicken breasts and green beans on the grill. Maybe a platter of raw veggies with dip and chilled glass of something to white to enjoy while it's cooking.0

I brought home a {free} huge steak, baked potato and some jumbo shrimp from work. My wife ate the potato and shrimp. I made a stir fry with some of the steak, and had a salad.

Steak! Sirloin, fat trimmed with side salad and I would have had mashed potatoes but they turned out so weird! Very very starchy, maybe forgot to clean the pan after boiling spaghetti delicious though!0
