Parmesan Spinach Balls

Found this on Pinterest and they are delicious!

Ingredients

2 (10 oz.) packages frozen spinach, thawed & well-drained
2 small onions, very finely chopped (I use a food processor)
2 1/4 c. stuffing with herbs (I use Pepperidge Farm)
6 eggs, beaten
1/2 c. melted butter
1/2 c. Parmesan cheese, shaved
2 tsp. garlic salt
1 tsp. black pepper
Instructions

Mix all ingredients until well combined. Form into about 1" balls; place on a baking sheet sprayed with cooking spray.
Bake at 350 for 20 minutes. Makes approximately 60 balls.

    Sodium: 73.2 mg
    Total Carbs: 0.7 g
    Dietary Fiber: 0.2 g
    Protein: 1.6 g

    Not bad! I was scared they would be much much more! I think I'll make this for Easter - I told my Dad we'd bring something and I think this might just work

    You will have to let me know how they turn out. I had some leftover uncooked and I ate it raw. It's just that good. I used freshly shaved Parmesan and Peppridge Farm Italian breadcrumbs.

    I've loved these since before I was a teenager (its been awhile) haven't made them in SO long tho, and now to find out they are something I can easily fit into the daily calorie goal is awesome! Thanks!

    My sister has made these numerous times. NUM NUM!!!! These are my FAVORITE! I dont ever make them cuz I will eat them all :)

    These look amazing! What are people having them along side? I'm going through a massive quinoa phase, and I'm normally pretty good at meal time- however, meal ideas would be great for these!

    That's pretty good sodium considering the parmesan. I don't like my balls too salty.

    we make these a lot and store them in ziplock bags in the freezer ... great for quick snacks and light meals! just reheat in the toaster oven ...

    we also use fresh chopped baby spinach instead of the the frozen ... VERY tasty!!

    THIS is a recipe i can get behind!

    my mom does something similar to this and stuffs tomatoes with it.
    i only dig the spinach portion and always leave behind the sad, empty tomato shell.

    this looks fantastic.

    I'm sure that you can saute fresh spinach, tho I never have. Bet they would be delish!

    I guess it would all depend on brands used, but that was the nutrition given on the website I used. Even if it was a little more, they are so good they are worth it!
