YO! I made these TWICE. They are awesome. HOWEVERRRRR, I needed to add more breadcrumbs. It was too loose and wet no matter how much I squeezed the spinach. I added whole wheat regular bread crumbs and that did the trick.
BUT, they are still awesome. I can imagine them as a falafel too.

Did you add the amount of butter it called for? I only added a cup of breadcrumbs and 2 eggs with 1/4c butter and they formed perfectly. You also have to drain the spinach really well.0 -
