    I had the annual Death by Chocolate event at work tonight. I ate really light all day in preparation. Which was a challenge, since today is my lift day. I brought peas, and pork chop, and cooked stir-fry and mixed veggies out of the freezer.

    Last night I didn't eat supper. At all. I went to bed at 6.30pm. I was thinking about making a pasta dish. Ah well, I will have pasta tonight, so I am good there.

    Tonight's supper is from the Olive Garden, but I dunno what I am eating yet. Will update.

    Chicken and cheddar sandwich, a carrot, green beans, mixed veggies and stir-fry. I still have lots of leftover chocolate from last night, so I might have some of that later.

    I've been obsessed with cornbread lately. Today is cornbread casserole layered with ground turkey, onion, bell pepper, and swiss cheese plus a side of steamed buttered cabbage. The cornbread is actually made with Greek yogurt and apple sauce!! It was great. :D

    Last night's supper was a trip to the Olive Garden.

    I had the buy one, take one thing. I got for the eat in part, zuppa Toscana(2 bowls), 2 breadsticks, half a supper portion of fettuccini alfredo, 2 glasses of peach tea, and a glass of water. Oh and my mom kept giving me the croutons from her salad.

    As for the take one part, I got more fettuccini alfredo. So I will most likely have that for supper tomorrow night.

    Tonight? Well, it's game night, and the Broncos are playing, so it's pizza night again. I might also include some boneless honey barbeque bites too. We shall see.

    My sister is a huge Bronco fan. She doesn't have pay TV, so I bet she will be calling my wife to see if she can come over and watch the game. After working all day, I know my wife will not be wanting company, but knowing her, she will not say no.

    My dad and I went to the Macaroni Grill for a late lunch today. It was my first time going there and it was so good! I had beef bolognese over spaghetti and a honking big meatball, and a small house salad. No, I didn't eat all of that! Lots leftover for another meal.

    Sloppy joes and potato salad. Tomorrow is spaghetti with sausage and zucchini added to the sauce. I'm like a crackhead for zucchini.

    I picked up a rotisserie chicken on the way home from work. My wife cooked a noodle stir-fry with it that was very good. I added leftover bacon to mine because.....bacon. Also had a chicken leg, tomato slices and toast.

    Lemongrass Basil Chicken Stir Fry

    1.5 lb(s), Chicken - Breast, meat only, cooked, roasted
    400.0 g(s), Beans - Snap, green, raw
    1.25 cup(s), Onion Raw Chopped 1/2 Cup
    6.0 oz(s), Mushrooms - Raw
    3.0 stalk large (11"-12" long), Celery - Raw
    8.0 medium, Carrots - Baby, raw
    1.0 container (210 gs ea.), Lemongrass Basil Simmer Sauce (Saffron Road - found it at World Market)
    1.0 tbsp(s), Coconut Oil, Organic Extra Virgin
    1 tsp red pepper flakes

    For four servings (very satisfying portion size): 500ish calories, 19g fat, 7g fiber, 59g protein (Heck yeah!)

    Served DH's over rice, did not have rice with mine tonight.

    We lost 18 to 17. I didn't even catch the game as I took a nap. One of my friends ended up keeping track of it and keeping me in touch with the scores. I also ended up having something else for supper last night.

    Tonight's supper? Well it was going to be cheese Ramen, but the liquid decided to be soaked in to much with the noodles, so now I have to figure out something else. Will have to definitely post later what I had.

    Awesome supper outside at my dad's place. Ground turkey tacos with cheddar and loads of vegetables and corn on the cob. Zevia stevia sweetened soda instead of beer. This is the first weekend in ages where I haven't had a drop of alcohol to drink. It definitely has helped to keep me in check!

    Hotpot with my family: I had lots of enoki mushrooms, water spinach, bok choy; also, noodles, mussels and pig's blood sausage with herbs and shrimp dipping sauce. Yes, you heard right, blood sausage. :D It was delicious... <3 Then I had dried mandarin orange slices for dessert because I had extra calories from my sad lunch...

    Was going to be the second main dish from the Olive Garden from last week, but it ended up tasting flat.

    I ended up having some salad with croutons and a lot of Italian dressing and some Orange Gatorade with water and my nighttime pills.

    Husband's Birthday this past weekend. He requested Chicken Pot Pie for dinner. First time making it from scratch.

    We went to dinner at a new lobster/crab shack (in St. Louis, but it was surprisingly good/fresh!).

    I started with Lobster Frito Pie - house made pork rinds with frito seasoning, chili, lobster meat, cheese and sour cream.

    Well I'm not sure "Funfetti" is ever considered healthy, but you could easily leave that part out! I thought they were delicious, I didn't put syrup on mine, just a little powdered sugar, but I don't know that you even need that.

    Thanks. I would change out the 1/2 & 1/2 for 2% too. When we were making a lot of waffles we used the mixes. I never thought about hydrogenated oil being in there. I still have a couple of boxes of the mix. I will have to look and see what's in there.

    My mom had a light stroke three weeks ago. Her nurse at the rehab was talking about not using any oils that congeal at room temperature because it will do the same thing in the blood vessels in your brain. I had never liked using them, but hadn't thought about the hidden ingredients in mixes. Thanks again for the link.
