  • Shredded chicken tacos and really low in calories!

    Throw some boneless chicken breast in there with a jar of salsa and sprinkle some low fat mexican cheese(I like Weight watchers brand) and put on high for 4 to 5 hours....Shred the chicken and put on a whole wheat fajita tortilla with some low fat sour cream, an avocado slice and some cilantro...Yum!! Without the avocado I think they're only about 150 calories per taco

    I call it my Crockpot Chicken Soft Tacos.

    Throw 4-6 boneless, skinless breast into the C.P. and cover it with a jar of Salsa Verde (I use the Safeway Select Brand). Put it on low and let it go all day. Remove the breast and shred with 2 forks. Place chicken back into sauce. Serve in your fav tortilla (I like Mission white corn) with your fav taco toppings: lettuce, tomato, onion, jalapenos, olives, avocado....you can also serve with Greek Yogurt which tastes just like sour cream......ENJOY! :drinker:

    Hey I really love this topic...but could you delete the replies that have "bump" ?
    I try to scroll through all the replies to find different recipes, and it's hard with all the 'Bumps' on the path LOL!
    I know you got great responses which is great support (definitely encourage people to do so) but I'd love to check out the recipies !

    You can just type bump and it will put it under your my topic column and make it easier to find later to reference.

    OHHHHH Thanks for sharing....Bump was getting a little annoying...LOL and I googled it too...and actually did find a ricipe site LOL! Too funny!

    I made this as a breakfast side dish when guests stayed over. It could make a good weekend breakfast. From old "crockpot365" recipe.

    Crockpot Apple Oatmeal

    Ingredients:
    --1 cup of oats
    --2 cups of milk
    --2 tablespoons of brown sugar
    --1 tablespoon of vanilla
    --pinch of salt
    --1 chopped apple

    Directions:

    Mix all and add to slow cooker. Cover and cook on high for 1-2 hours or low for 2-3. Check consistency of oats--some people like to chew, some people don't. Garnish with some cinnamon.

    3-4 chicken breasts
    one package dry italian seasoning
    one package cream cheese (reduced fat or fat free is fine too)
    one can cream of mushroom soup
    1/2 cup grape juice or red wine

    cook ingredients together on low for 6 hours. serve over egg noodles for an easy chicken stroganoff.
    YUMMY!!!! Got this in the crockpot now!!!!!

    Hey there! I like to throw a nice tough chuck roast in the crock pot with a couple cans of beer to tenderize it. Add the kind of seasonings you like and you are sure to have a nice tender and tasty chuck roast!

    Curries are GREAT done in a slow cooker!
  • Ingredients:
    Pork Loin (approximately 2 lbs)
    1/4 cup butter
    1/2 cup mushrooms
    1 cup celery
    1 medium onion
    1 chicken bouillon cube
    3/4 cup water
    2 TBSP flour
    2 tsp salt
    1/4 tsp pepper
    3 TBSP soy sauce
    Brown the meat in the butter. (This just gives the meat a pretty color. I usually do this and dump everything else in the crockpot, but I'll write it as my recipe actually reads) Add mushrooms, celery, onions to skillet. Crush chicken bouillon and water, stir untill dissolved. Stir into flour, salt, pepper, blend until smooth. Add to vegetables and cook until thickened. Stir in soy sauce. Pour veggie/sauce mixture over meat. Cook in oven at 325 for 1 1/2 hours or on low in crock pot all day. The gravy is good with mashed potatoes or rice.

    I've tried about 20 or so recipes so far and they have all turned out very good. I love that the calories are so low!

    i also use this cookbook at least once a week for the family....had only a couple of not really fond of "pizza potatoes" was the biggest let down but love this cook book and calories are really low....

    1 can cream mushroom soup
    1 can of tomato soup
    chicken breast

    serve over pasta

    I got this out of Prevention's Slow Cooker Recipe Book. It has some great recipes!

    I made this earlier this week and it was good. Chicken came right off the bone. If you like it spicy, I would add more seasoning. It was on the mild side.

    Crock-Roasted Chicken with Rotisserie Rub

    1 broiler/fryer chicken ( 3 1/2 to 4 pounds)
    2 tsp paprika
    1 1/2 tsp onion powder
    2 tbsp garlic powder or 3 cloves garlic, pressed
    1 tsp salt
    1/2 tsp ground black pepper

    1. Rinse and pat chicken dry, removing any visible fat. Discard giblets and neck. Coat crock pot with cooking spray.
    2. Combine paprika, onion powder, garlic powder, salt and pepper in bowl. Stir in warm water by the teaspoon until thick paste forms. Coat chicken inside and out with seasoned paste before placing in crock pot, breast side up.
    3. Cover and cook on low 6-7 hours or on high 3 1/2 to 4 1/2 hours.

    Serves 4

  • Crock pot chicken taco stew

    Ingredients
    1 onion, chopped (not needed if salsa is used)
    1 16 oz. can black beans
    1 16 oz. can kidney beans
    1 16 oz. can corn (drained)
    1 8 oz. can tomato sauce (san substitute for 1 large jar of salsa)
    2 14.5 oz cans diced tomatoes w/chilies
    1 1.25 oz packet taco seasoning
    2 boneless skinless chicken breasts

    Directions
    Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving remove chicken and shred. Return chicken to slow cooker and stir in. This is good eaten with cheese, sour cream, or tortilla chips.

    Makes 14 loaded 1 cup servings

    Wow! I read every recipe and made my own recipe sheet from all of them. Lots of good cooks out there. Great time savers and easy prep for a good meal waiting when we come home from work. Thanks for sharing!:smile:
