    Check out the Cooking Light website -- specifically the Easy Weeknight Meals section. A lot of their recipes are near to or under 300 calories and they're somewhat easy to make.

    If you have a nice big soup pot you can try turkey spaghetti sauce. I have a three gallon pot which is minimum for this or you can cut the recipe in half.

    2 packages 98% fat free Honey Suckle White Turkey
    4 large cans of tomato sauce ( i prefer the organic no sodium added)
    4 cans of mushrooms
    4 or 5 large fresh tomatos diced if available otherwise I use four large cans of no sodium diced tomato
    3 large green peppers
    1 or 2 red onions depending on size (I leave these out when I make mine because the hubby won't eat them)
    1 cup of flour for thickness (You can also used boiled down squash for even less calories but it takes forever)
    1 packet mcormik thick and zesty spaghetti seasoning
    1 packet mcormik italian style spaghetti seasoning.

    The seasoning packets have alot of sodium in them so If you are any good at seasoning things yourself you can forgo those.

    It comes out to aproximately 100 calories per cup of sauce.

    I pour 1.5 cups of sauce over 1 cup of whole grain noodles and it comes out to about 350 calories and it's super filling.

    My favorites are chili without meat and bean tacos. My Chili recipe is:

    One 15 oz can tomato sauce
    One 15 oz can kidney beans undrained
    1 1/2 tsp chili powder
    1/2 tsp cumin
    1/2 tsp salt
    1/8 tsp black pepper
    1/8 tsp red pepper
    1/8 tsp garlic powder
    1/8 tsp onion powder
    pinch of crushed red pepper (opt)

    It takes about 15 min to throw together. I heat up some browned ground beef for other family members who don't care about calories to add to their bowl. The recipe is so low in calories that you can even top it with a half ounce of cheddar cheese and still stay under 300 calories. You could even use your own fav chili recipe with real tomatoes, peppers, etc. And take out the meat.


    Bean tacos are simply two soft corn tortillas (taco size) topped with warm kidney beans, taco sauce, cheese, tomato, onion, and lettuce.

    spaghetti squash, spaghetti sauce, and pre cooked shrimp. cook squash in the mic, heat up the sauce, warm the shrimp up with a little spray butter and garlic.

    Lo-cal Pumpkin Pie Pudding
    Serves 1 Calories-107 Carbs-17 Fat-3


    1/2 cup Canned Pumpkin
    4 tbsp Cool Whip - Whipped Topping
    3 Tsp. Splenda - No Calorie Sweetener
    ¼ tsp Nutmeg
    ¼ tsp Cinnamon

    Mix all ingredients and serve. Yummy treat!

    I have a recipe that is slightly over 300 cals (307) but you can probably swap the egg noodles out for chicken strips which might make it less calorific.

    Coconut Chilli and Lemongrass Stir Fry

    Tesco Finest - Coconut Chilli & Lemongrass Stir Fry Sauce, 90 g (1/2 of a pack)

    Tesco - Oriental Stir Fry, 115 g (1/2 Pack)

    Tesco - Egg Noodles, 100 g (1/4 pack)

    Throw the stir fry mix into a Wok/pan for 5 mins. Add Egg noodles and cook for another 3 mins. Add the sauce and heat for 2 mins or until hot all the way through. Serve. Very fast and yummy dinner
