    spaghetti squash, spaghetti sauce, and pre cooked shrimp. cook squash in the mic, heat up the sauce, warm the shrimp up with a little spray butter and garlic.

    Lo-cal Pumpkin Pie Pudding
    Serves 1 Calories-107 Carbs-17 Fat-3


    1/2 cup Canned Pumpkin
    4 tbsp Cool Whip - Whipped Topping
    3 Tsp. Splenda - No Calorie Sweetener
    ¼ tsp Nutmeg
    ¼ tsp Cinnamon

    Mix all ingredients and serve. Yummy treat!

    I have a recipe that is slightly over 300 cals (307) but you can probably swap the egg noodles out for chicken strips which might make it less calorific.

    Coconut Chilli and Lemongrass Stir Fry

    Tesco Finest - Coconut Chilli & Lemongrass Stir Fry Sauce, 90 g (1/2 of a pack)

    Tesco - Oriental Stir Fry, 115 g (1/2 Pack)

    Tesco - Egg Noodles, 100 g (1/4 pack)

    Throw the stir fry mix into a Wok/pan for 5 mins. Add Egg noodles and cook for another 3 mins. Add the sauce and heat for 2 mins or until hot all the way through. Serve. Very fast and yummy dinner

    Country Garden Casserole
    1 lbs. lean ground turkey
    1 can tomato sauce
    1 can tomato soup
    1 can diced potatoes
    frozen carrots
    frozen corn
    gr. pepper
    onion
    salt/pepper to taste
    1 packet splenda

    Cook turkey, green pepper and onion until browned and tender. Drain. Set Aside
    In 13x9 in pan, layer potatoes, corn and carrots. Layer turkey, peppers, onion on top.
    Pour soup/tomato sauce over top. Season w/ salt/pepper. Sprinkle Splenda over top.
    Cook in 350 degree oven for 40 mins or until heated thru.

    About 250 calories, 6 servings

    Vegetable "Fried" Rice

    Olive Oil (enough to saute vegetables)
    1 Green Pepper
    1 Red Pepper
    1 Onion
    1 Zucchini
    1 Carrots
    Bean Sprouts
    1 Head Broccoli
    Rice (Cook serving for 4)
    Soy Sauce (to taste - use low sodium to keep it healthy!)
    1 Tbsp. Minced Garlic

    Cut veggies to desired shape and size. Saute vegetable in olive oil until preferred tenderness . Add in garlic and soy sauce and let it absorb into the veggies. Cook the rice separately according to directions. Add rice into vegetable mixture stirring well. Add soy sauce to taste and enjoy!

    About 205 calories per serving, this serves my family (4 of us) and leaves some for leftovers! It's my dad's favorite!

    Add in meat or any other desired veggie to suit your tastes, its a delicious dish!

    A huge pot of veggie soup. Really good, Good for you, enough for several meals.
    I use canned tomatoes in juice, a little potatoes, lots of cabbage, and all the frozen veggies you like. MMMM....I think ill go have some now.:happy:

    Chicken Enchiladas
    3 boneless skinless chicken breast, boiled and shredded
    1 can Old El Paso Green Chilies, Chopped
    2 Green Onion Stalks, Chopped
    1 Package (2 cups) 2% Shredded Mexican Style Four Cheese
    2 Cans Old El Paso Enchilada Sauce
    1 Container Daisy Brand Light Sour Cream
    1 Green Zucchini, diced (I wanted to be sure to add a veggie lol)
    18 Mission Corn Torillas - Extra Thin

    In a large bowl combine chicken, chilies, onion, 1 cup cheese, 1/2 can enchilada sauce, sour cream & zucchini. Mix well.

    Pour the other half of the can of enchilada sauce on the bottom of your dish.

    Warm the tortillas, stuff them with the chicken mixture and roll them. Place them in your cooking dish. Repeat until all 18 tortillas are stuffed/rolled/placed in dish.

    Top the tortillas with the other can of enchilada sauce and remaining cheese.

    Bake in the oven for a good 30 minutes or until the cheese is melted.

    Each Enchilada comes out to be approx 117 calories.
