    Love these, so simple to make and yummy to eat... covers all the macros too. Just bought some dried black beans to cook up for this the other day.

    I was a lazy man tonight and didn't cook any veggies. But I did have a turkey burger, ham, Colby Jack, Pepper Jack sandwich with pickles, onion and tomato. Also had popcorn, carrot and grapes. Not too bad.

    Made lemon pepper chicken breast, which I paired with Alton Brown's Oven baked potato recipe and my friend's cooking method for Iowa style sweet corn.

    Today I tried to use up what still was left in the fridge. That's what came around after experimenting a bit:

    It basically is a celery-mushroom stir-fry:
    I fried garlic, celery and mushrooms in a pan in a little bit of oil. After some minutes I added a little bit of apple juice and let them cook in that for a little bit more. Then adjust to taste with 1tbsp. sour cream and 1 slice of cheddar. Spice it up and garnish with a little bit of basil and some (5 or so) chopped cashews.

    Margie made un-stuffed peppers. We were out of shredded cheese so she used Pepper Jack slices. Very, very good.

    I just finished dinner! I had a cup of Trader Joe's Lentil Soup with Vegetables, and 3 oz of Tempeh on a small bed of lettuce. Not very inspiring, but haven't been shopping in a while and I am almost out of fresh veg.

    Tempeh was less than inspiring though.

    I made french toast for dinner tonight. I added some chopped turkey to the egg mixture. Love that sweet and savory combo. Obviously I went overboard on the syrup, but there was a lot left on the plate...I swear! :yum:
