    On the 7th October, I'd opted for an easy fish pocket dinner. Cod + cherry tomatoes + broccoli in ginger garlic sauce with sundried tomato and spinach orzo .

    Made lemon pepper chicken breast, which I paired with Alton Brown's Oven baked potato recipe and my friend's cooking method for Iowa style sweet corn.

    Today I tried to use up what still was left in the fridge. That's what came around after experimenting a bit:

    It basically is a celery-mushroom stir-fry:
    I fried garlic, celery and mushrooms in a pan in a little bit of oil. After some minutes I added a little bit of apple juice and let them cook in that for a little bit more. Then adjust to taste with 1tbsp. sour cream and 1 slice of cheddar. Spice it up and garnish with a little bit of basil and some (5 or so) chopped cashews.

    Margie made un-stuffed peppers. We were out of shredded cheese so she used Pepper Jack slices. Very, very good.

    I just finished dinner! I had a cup of Trader Joe's Lentil Soup with Vegetables, and 3 oz of Tempeh on a small bed of lettuce. Not very inspiring, but haven't been shopping in a while and I am almost out of fresh veg.

    Tempeh was less than inspiring though.

    I made french toast for dinner tonight. I added some chopped turkey to the egg mixture. Love that sweet and savory combo. Obviously I went overboard on the syrup, but there was a lot left on the plate...I swear! :yum:

    I cooked a pot of peas this afternoon, frying up a little turkey sausage to go in them. The plan was to cook the rest of the sausage for supper to go along with the peas and the leftover un-stuffed peppers. But my cousins came in from Tampa and wanted us to go to Pizza Hut with them. So the peas went in the fridge and we went to town. I limited myself to a salad, one slice of each pie and 1 1/2 bread sticks.

    I need to learn to eat better. That top pic is something I would make and share with my OH but we wouldn't pair it with anything, just that on its own & a big portion each.

    At lunch we did just have the un-stuffed peppers and cole slaw. With rice, meat, cheese, tomatoes and peppers, it is a pretty well rounded meal on it's own, but I can't stand to go two meals without something green. The frozen green beans and stir-fry veggies are so easy to cook I rely on them too much.

    Grilled rack of lamb, asparagus, spinach salad and plain sweet potato. Best of all my mom cooked it all. Enjoying a visit and a break from the kitchen.

    I had an 80th birthday party at work tonight. I had pulled pork, chicken leg, teraki chicken, rib, glass noodles and chicken, chicken noodle salad, fried rice and black eyed peas. All very good. And as big as the plate looks, it was light compared to lunch.

    Tuna salad sandwich on potato bread with TJ's no-salt albacore, onion, garlic, mushrooms, tomato, dill weed, dill pickles, romaine lettuce & mayo, homemade pink beans cooked in beef broth, crushed tomatoes, onion, garlic, basil, carrots, salt and pepper. Sides of cucumber and grapes.

    We had a whole pile of folks at Sister's house. I didn't try everything, but what I had was very good. Grilled chicken leg and thigh, grilled chicken breast, baked beans, Margie's veggie pizza, okra, slaw, potato salad and chili.

    The cornbread salad got left in the car until I was eating dessert, so...... CBS, Margie's pineapple casserole, coconut cake and blueberry buckle. There was more to choose from, but I had to set some limits for myself. Very good.

    Salad (spinach, cherry tomatoes, asparagus, mini portobello mushrooms, turkey, parmasean cheese, cucumber, raisins, black pepper, and dressing was 2 tbs of coleslaw and 1 tbs macaroni salad. 1/2 a raisin bagel with 1 tbs cream cheese.

    I've been a little behind in updating meals - and haven't been cooking much at home or taking pictures!

    Friday went out for belated anniversary dinner to one of my favorite restaurants.

    Started with mussels in saffron cream sauce (these actually were not good at all and they ended up taking them off our bill.... but the picture is pretty!)

    Shared a tasting plate which included (clockwise) crab cake w/ corn salsa, fish and chips, crab and corn chowder, and shrimp cocktail.

    Best part of this restaurant is their bread - parmesan garlic pull apart bread baked in a cast iron skillet.

    But the best part of this particular meal was dessert... Cinnamon sugar doughnut holes with maple bacon whipped cream. Two complimentary glasses of champagne as well.

    I stopped on the way to work and picked up a rotisserie chicken from Harvey's Deli. Had a leg straight up and made a sandwich with some of the breast. Also had peas, green beans, stir-fry and an orange.

    Again I've been slacking with posting and pictures...

    Saturday was chili dogs, mac n cheese and pumpkin beer
    Sunday was butter chicken with snap peas over rice with naan bread (trader joes helped)
    Monday was tortilla soup with some of my crockpot salsa chicken I had in the freezer
    Tonight we went to a neighborhood mexican restaurant. I had chile verde pork with refried beans and tortillas, chips/salsa and a Corona Light
