Giant salad, sandwich of Mediterranean chicken and goat cheese along with some veggies, and steamed carrots. About 650 cals, but I was very hungry!

I saw a recipe on FB where you make these sort of cheese omelette cakes.
Chop up vegetables, herbs, meats and place them into a fry light sprayed muffin tray, in a separate jug whisk however many eggs you want, mix in a dash of milk and pepper to season and pour into the muffin tray where you've just added the other ingredient to and then pop in a press heated oven in 200 degrees for 20-25 mins. They're gorgeous0

I made a potato cake with the last of the baked potato I had the other night (potato, egg, mushroom, brocolli, green onion, turkey, pecorino, whole wheat flour, garlic salt, black pepper, sriracha); steamed some broccoli, yellow squash and cherry tomatoes; red bell pepper.

My favorite meal (any time of day) at the moment!!
 Egg whites
 Petite diced tomatoes (canned)
 Spinach (frozen)
 Thomas' light multigrain English muffin
Spray butter (can't live without it!!)
 Pepper
Tiny bit of salt on spinach
So filling and packed with all the good stuff 0 0

Another improvised use of leftovers. I had some leftover boneless naked chicken wings from Pizza Hut. I had them as a dinner there about 3 days ago.
Turned them into Chicken Parmesan with some tri color pasta swirls. Pretty tasty and I'm glad I used them up instead of tossing them. Topped with 1/2 C (a lot I know, but it was YUM) mozzarella and a very light sprinkle of parm. 0 0

Dinner last night - Mussels and "Man Bait" Apple Strudel --- Ladies I think pasta gets my guy more than strudel, but that's the name.... and it was pretty good, I didn't eat the pasta so I could have the dessert
