I am new to this site, but I gotta say, I LOVE food porn! A person gets so many good ideas. I had 4 oz boneless, skinless chicken breast grilled on the Forman grill seasoned with Penzy's Forward spice, 1 cup of steamed broccoli, a serving of baked sweet potato fries, and a cutie orange.0

This was more of a lunchtime meal. A week late for me, and a week early for Mamma, birthday party. The pork was not all the way thawed out when the BIL put it on to cook. As a result, it wasn't ready when the drunken chicken and everything else was. {see the 100F internal temp} The plan was to eat light the first coarse, then have a slice on the second coarse. Well, you know what they say about plans.
We had chicken, mashed sweet potatoes {there was brown sugar for those so inclined}, pickles, kale, green beans with almond slivers, and roasted sweet potatoes and onions.
Many ate the pineapple casserole with the main coarse, but I had it as a dessert. Also had blueberry fluff cake and cherry chocolate cake {which got flipped over on my plate}. We took up the pork, but everyone was too full by then to even taste it. Everything else was very good.

I made foil packets with sage- and garlic-rubbed chicken thighs, garlicky potatoes and carrots, and plenty of onions. If they turn out remotely photogenic I'll try to remember to update in the actual spirit of the thread later.0

I have never shared on a message board here before, but tonight's supper was so scrumptious, I just had to share. I made two recipes off of skinnytaste.com and both were a hit with my family. I made the Chicken Rollatini with Prosciutto and Cheese and Teeny-tiny Potatoes with Rosemary. Both were inhaled by my family, but the Chicken Rollatini was especially delicious! 20 minutes in my oven and they were perfect! Here's the link to the Chicken Rollatini if you're interested: http://www.skinnytaste.com/2011/04/chicken-rollatini-with-prosciutto-and.html

Tonight's supper was courtesy of my customers. It was a salad {I had two bowls}, garlic toast, corn on the cob and lasagna. It was all good, but I passed on the cake. I may have a bowl of my lite ice cream later.
