    Black bean & corn quesadillas >>> http://allrecipes.com/Recipe/Black-Bean-and-Corn-Quesadillas/Detail.aspx

Super yummy, and only 281 calories for half of the quesadilla, which is very filling too!

Black bean brownies - sounds odd, but very good. A great flourless dessert!

I usually eat them on the side with a turkey burger patty, along with some mixed veggies. I'm not sure why, but I love them with ground turkey.

I make a really easy side dish with them that is super yummy! 1 an of black beans, 1 can of sweet corn, and 1 small jar of medium salsa... cook it at medium heat until it's hot, then drain it really well in a collinder and serve! It's spicy and delicious as a side dish with burgers or something :)

    Cilantro
    lime juice
    cayenne pepper/chili spices

    Pre-heat oven to 400
Saute minced garlic with chili/cayenne pepper spices in some evoo.
Stir in banana and drained can of black beans. Add coarsely chopped cilantro before putting into the empanadas.
Once everything has melded together, flatten out goya empanada discs and put 1-2 tbsp of the black bean mixture. Sprinkle a little cheese in the empanada and then fold in half (half moon shapes) and seal with a fork (go around the edges). Brush both sides with evoo and sprinkle top with cheese (optional).
Bake for 15-25 minutes or until desired brown color. Enjoy :D
