Summer quinoa salad!!! Quinoa, smoked tofu, nectarine, spring onions, jalapeño pepper, and feta cheese with a honey garlic dressing.
Oats with dates, blueberries, and a sprinkle of cinnamon. Cottage cheese scramble.

Here are a few of my favorite breakfasts. Everything is gluten free and vegan and has atleast 20g of plant based protein. Two smoothie bowls and a stack of vega chocolate protein pancakes.0 -

Some of this week's meals...so far
Asian bowl w/leftover rotisserie chicken, bulgar, spinach, carrots, peanuts and sesame/soy dressing (with garlic and ginger)
Lemon-basil shrimp tossed with olive oil, whole grain linguine over spinach
Tilapia in tomato curry coconut milk sauce over brown rice

This is a recent and favorite dinner: tempeh with vegetables (green beans and broccoli) in spicy peanut sauce, over rice noodles. A little higher in fat than my usual meal, but I use this kind of meal during a hard training week b/c I need the calories. Still no added fat to it, though.
