Breakfast outside this morning, it was a beautiful day. Fresh blueberries on Greek 2% yogurt with mango, thinned with a little fat free half and half. I put a bowl of ice under it so I could eat it at my leisure while working on art projects. White tea with melon flavoring.
Lunch was eggs scrambled with pico de gallo, fresh salsa verde, onion, tomato, and "power greens"
Supper was Caribbean Black Beans and Chicken.0 -

Toasted flax seed bread topped with 1/4 avocado, arugula, and 4 oz sockeye salmon lox, with carrots. Around 400 calories

Roasted Moroccan spice rubbed eggplant wedges with grated Parmesan, mujadara with plumped raisins, wilted spinach + garlic chips, quick pan-grilled apricots with ricotta, pepper, sea salt
Lunch salad of greens, blackberries, black beans, nectarine, green onion, and vinaigrette, with a whole wheat egg muffin topped with garlic-chive hummus and some cucumber
Green pepper stuffed with pinto beans and fontina cheese, topped with homemade salsa + berries

Hubs took the last of the turkey, so I was forced to get creative, I was so hungry. Sliced zucchini, with cheese than tuna, slice zucchini on top with tomato and a little more cheese with some strawberries and a little cottage cheese.0 -
160 calories worth of veggies (steamed butternut squash, raw bell pepper, and grilled zucchini and eggplant). Colours are delicious!

Huge salad. Baby spring mix, smoked salmon, roasted unsalted nut mix, blueberries, raspberries, pecorino, and catalina dressing
Last night's dinner. Firecracker baked tofu, stir-fry veggie lomein, yummmm.

Here is my dinners that weren't left overs from the last week.
1. Steak and potato salad with red wine and mustard vinagarette.
2. Egg salad, multi-grain bread, thyme sweet potatoes, and cauliflower in my first attempt at low cal cheese sauce.
3. Corn on the cob, fried green tomatoes, multi-grain bread, brussel sprouts, and a slice of bacon.
I've been enjoying being out of school and cooking all the time while I'm looking for work.

Homemade ginger-soy black bean burger over baby spinach +pickled red onion salad with some A1 steak sauce (didja know it's vegan?) and a fried egg, with plum. Going to make this burger again as "meatballs" for a potluck this weekend for sure, maybe with some Thai basil added...hmm...
