homemade turkey burger on a one slice of rye toast with mayo. (can eat over salad if too many carbs today) Romaine and tomato salad. topped with charred red pepper "candy". Glass of milk.0

Supper was Spicy Tortilla Soup with Chipotle chicken, Anaheim chili peppers, corn and black beans. I had the first bowl dished up when I realized I had forgot the crushed tomatoes. A quick trip to the pantry and a few more minutes on the stove fixed that. Served with toasted roll and topped with cheddar. Very good. And only 74 calories per 150 grams.

Quinoa with chives and green onion, grilled fish and bell pepper with some cottage cheese

Smothered Turkey patties with wild Rice and Green Beans. Gravy is from turkey meats juices and a little cornstarch.0

Flounder cooked with fresh lemon and butter. Brown rice and spinach with grated Parmesan cheese and a can of okra and tomatoes (my favorite) Cucumber slices with light sour cream and a bunch of dill.

Margie and I went to Main Street Station for supper tonight. It was chips and salsa, a salad and the shrimp Alfredo. Pretty good.

For supper tonight I added mixed veggies, onions, tomatoes, bacon and cheddar to the Tortilla soup. Very good. In fact, it seems to get better everyday. Maybe it's just the bacon.

Supper tonight was from the teen birthday party here at the Civic Center. It was hot wings, meat balls, lil' smokies and deviled eggs. I thought about cooking a few veggies, but never did. I did eat a carrot as dessert.

Except for the roll, supper was all homegrown. Peas, tomatoes, cucumbers, pork loin {BIL raised pig} and corn. Very good. We had ice cream later.

Low Carb Smothered Jalapeno Popper Chicken
Ingredients
6 Boneless, Skinless Chicken Breast
salt and pepper to taste
For the Jalapeno Popper Layer
1/4 cup jalapeno slices, diced (the kind in the jar that you put on nachos)
1 (8 oz) package cream cheese, softened
1/2 cup low fat mayonnaise
1/2 cup Kraft grated Parmesan
For the Topping
1/2 cup Kraft grated Parmesan Cheese
Directions
Preheat oven to 425 degrees. Place chicken breast in a 13×9 casserole dish and bake until juices run clear. 30-40 minutes, depending on the size of the breast. While chicken is baking, mix jalapenos, cream cheese, low fat mayonnaise and Parmesan cheese. Mix until well combined. Remove chicken from oven and reduce to 350 degrees. Spread jalapeno popper mixture all over each Chicken breast until well covered.
For the topping Parmesan cheese Sprinkle on top of jalapeno popper topped chicken. Bake until the tops are lightly browned, about 15 minutes. ENJOY!!!

Supper tonight was ham, egg and Swiss on a toasted Ciabatta roll, green beans, mixed veggies and corn. Very good, and after a hard day in the garden, I was looking for easy.

Supper was a ham, turkey and pork loin sandwich with Swiss, Pepper Jack and onion. Also had mini sweet peppers, stir-fry veggies, mixed veggies, carrot and cucumber. Very good.

I put some chopped red peppers, onions, garlic and zucchini chunks..... sautéed them until slightly soft.... then put a can of Italian stewed tomatoes cooked for about 5 min ...... then I grilled two bocca veggie burgers on my George Foreman .0

This MOther Hubbard is staring at some empty cupboards so.... it was a mish mash. Roast Beef/Cheese rolls, Raw carrots, a celery stalk, leftover cauliflower bits, garden fresh cherry tomatoes, and some caesar dressing to dip stuff in.
All in all, darn yummy.0 -

My supper was from the family reunion at work tonight. It was a salad, baked beans, chicken and yellow rice, collard greens and ribs. Very good.
