@Jess102979 - I sauteed some scallion and chopped bell pepper and added in the chopped zucchini "meat" from hollowing them out (4 zucchini, about 8oz each), added in 8oz of cooked and shredded chicken, 1/4 cup of BBQ sauce, filled the boats and then topped with cheese. Next time I'll add more scallion, cilantro, and probably some pickled jalapenos on the top. Bake covered at 375 for about 30 mins until the zucchini is soft.0

I love mango and avocado salsa. I make mine with red onion, lime juice and cilantro (looks similar to yours). I like to serve it with jerk seasoned shredded pork. OMG...so good!
I make mango avocado salsa with jerk chicken quite often! Also over blackened salmon, crab cakes, etc. Love it in the summer time!0 -

I find that sriracha usually makes everything better....

I have the flu...meh.
But, I made my favorite miso soup, with soba noodles, mushrooms, and spinach.
Happy Herbivore's recipe for the soup plus mushrooms, 128 calories, 1.5g fat, 28g carbs, 5.2g fiber, 7.4g sugars, 5.1g protein
Add 2oz soba noodles and 2c chopped fresh spinach

Thanks! Yes, those are gold coins and marshmallows. Can't take credit for that creation, though- a colleague of mine whipped that up for one of our meetings to make things more fun0
