Almost forgot you requested a pic. Here it is!
As you can probably see, the texture came out a bit off. You can see chunks of cream cheese. After I made it, I googled a bit about cheesecake, and apparently, it's important to let the cream cheese go to room temperature before mixing. So I may try it again sometime with that in mind0 -

Dude, I just made this yesterday - it is AWESOME! Of course I had to have a crust so I bought a graham crust and so it's not as low carb as it once was. And I also used the 1/3 less fat cr cheese too. Otherwise followed the recipe. I'm using the recipe with 1 lb of Ricotta chs & 1 lb of cr cheese.
I also am using a blueberry spread as a topping - Smuckers Simply Fruit, Blueberry. My wife likes to use raspberries & Splenda (mixed in a blender).
It's a huge hit with the family; I just hope they save me some.0 -
