    Getting ready to smoke some pork-loin steaks...30 calories/ounce if they are trimmed of fat...but what fun is that? Instead, I wrapped them with a slice of Farmland 40 cal./slice bacon. I will eat the bacon, trim the pork loin fat, and eat the smoked pork loin steak - calling it maybe 35 cal/oz when done. Each steak weighs 8 oz. untrimmed.

    Seasoning is - don't laugh - Chef Paul Prudhomme's Magic Salmon Seasoning. We found out by experimenting that it goes great with pork loin as well as it is fantastic on broiled salmon.

    Smoker temp set at 225F
    Smoke will be pecan. Pecan is milder than hickory, stronger than apple.
    Done internal temp of 145F.

    Correction - I had to smoke them at 275F to crisp the bacon...

    My supper was a 1300 calorie, pecan smoked, garlic-chipotle bologna sammich with stone ground mustard and muenster cheese. I was still way under calorie-goal for the day due to a nice hour long bike sprint.
