    So far today I've had assorted lettuces topped with cottage cheese and tomatoes and some cucumber sticks. Planning cabrese salad, cooked kale and chard, and more cucumbers with dinner. And probably some chips and salsa before dinner. Our garden is producing tomatoes and cucumbers faster than we eat or preserve them!

    Breakfast had kale, strawberry, cherry, blueberry. Lunch had cranberry. Dinner had potato, carrot, kidney beans.

    BTW, the breakfast smoothie which had the kale, strawberry, cherry and blueberry also had 12 grams of Liv Fit superfood blend, which contains dehydrated powders of "pea, hemp, chia, quinoa, cranberries, cherries, blueberries, spinach, broccoli, beets, shiitake mushrooms, green tea extract."

    If beans are vegetables then I think I win. I eat 700 calories of beans a day.

    I think I could power my car with the amount of gas I would produce if I were to try that.

    Today: lettuce, tomato, banana, broccoli, carrots, kale

    :D so true.

    Today one bag of veggie made cauliflower rice (Birds Eye) & four servings of pepper strips & onion.

    I'm ashamed of how few fruits and vegetables I eat. Typically I only eat 2-3 servings a day. And I know better. :(

    Apple, strawberries, blueberries, cranberries, spinach, onions, tomato, lettuce, basil, oregano. Today was not a typical day for me though, ate a lot of restaurant food.

    Local peaches and zucchini have been really good lately!

    Love this! Um... pumpkin at lunch in homemade lentil soup at a cafe; homemade curry dinner w/ sweet potato, green beans, garlic, ginger, curry leaves, cauliflower, onion, capsicum, zucchini, carrot.

    1 ear of corn (I'm counting it lol, also from the garden)

    And then I'm getting ready to make my daily green smoothie with-

    So inspiring! So far I've had:
    Breakfast hash with Sweet potato, Yukon gold, red bell pepper, red onion, poblano chili mushrooms, garlif
    Lunch Salad w/ napa and purple cabbage, carrot, zucchini, garlic
    Dinner will be stuffed bell peppers and chopped Italian salad w/ romaine, artichokes, tomatoes, cucumber, zucchini, peppadew peppers, basil

    Today I had sweet potatoes, collard, cabbage, grapes, pears, lettuce, tomato and cucumbers. So much goodness and yeah I have been known to eat the whole bag or riced cauliflower as well- esp. with garlic powder, and seasonings

    Throughout the day? It was a good day for bunnies :smiley:

    broccoli, carrots, red cabbage, onions, baby red potatoes (318g) = 675g in aggregate
    blueberries = 655g

    A total of just over 16.5 bunnies counted the way I like to count my bunnies!

    Not the best but pretty good considering I had to work and run around crazy today. Breakfast - banana and apple. Lunch - carrots, tomato. Dinner - broccoli. Snack - apple

    Lunch: Red peppers, tomatoes, cauliflower, green beans, spinach, zucchini and red onion
    I will have at dinner: Spaghetti squash, zucchini, spinach, arugula and grape tomatoes

    For tomorrow's lunch have logged three servings of extra fine green beans & one bag of Birds Eye's Cauliflower Rice with Cheese Sauce. There's also a few veggies in the Healthy Choice Crustless Chicken Pot Pie.

    I tried eggplant for the first time today (not bad!) and had planned on coming home from an afternoon of errands and making a giant veggie stirfry-then my husband called and we're now going to Fazolis for pizza baked spaghetti and unlimited breadsticks (pasta sauce counts as a veggie right? ). I will still get in my green smoothie tonight though!

    On a sidenote-

    I've had horrible spider/varicose veins since my pregnancies/early 30s. My legs are the bane of my existence so I avoid looking at them. Out of the blue this past weekend my husband asked me what I was using on my legs, because the spider veins have cleared up so much, and I was like 'huh?' lol. I took a look at them and he's right-noticeable clearing up of some of the areas. I had no idea what I did, but then today I was reading through The Dash Diet Younger You (I've been following the DASH diet for a while now so just reading for recipes and such), and there's a section in the book about how some veg/fruit contains a flavonoid that improves circulation and also assists in potency of vitamin C, and these things can contribute to the reduction/improvement of spider veins. I've drastically increased my veg/fruit consumption since this past spring and it looks like there is at least one noticeable difference happening, very cool :)
