Green smoothie: banana, celery, cucumber, tangerine juice
Second breakfast: apple, blueberry
Lunch: kale, sweet potato, pumpkin, tomato
Dinner: lentils, carrot, capsicum, onion, coriander, zucchini
So that's 4 kinds of fruit and 12 kinds of veg3 -
Yesterday I had: Breakfast: grapes, carrot; lunch: peach, little gem lettuce; dinner: soup with potato, peas, onion, garlic, chili, celery.
Today I will eat: Breakfast: grapes, carrot; lunch: peach, broccoli; dinner: wraps with lettuce and onion.
I count this as 2 fruit and 3 vegetable portions per day - which is my goal.1 -

Once in a while I see jackfruit at the store, but it goes by the pound so it would be really expensive (those things are huge lol). I really need to try it sometime though.0 -

I have never had fresh jackfruit. This was canned jackfruit that I cooked with BBQ sauce to make a "pulled pork"-type wrap.0 -

And besides the canned type @janejellyroll mentioned, Upton's Naturals brand has some pretty tasty pre-sauced jackfruit that's available in all the healthy-ish food stores here in my midwestern US midsized city. It's in the refrigerated section where they have vegan fake meat, in a box.
Whole Foods locally has had cut-up chunks in the produce area lately, too. IIRC, it's near other precut fruits such as watermelon, but don't 100% rely on that specific a memory from me!
Worth trying, either as a fresh fruit, or a pulled pork stand-in (doesn't taste at all like pork, but does taste good).0 -
If beans are vegetables then I think I win. I eat 700 calories of beans a day.

I think I could power my car with the amount of gas I would produce if I were to try that.
Today: lettuce, tomato, banana, broccoli, carrots, kale
