It's a baked meringue -3 egg whites, 1/2 tsp cream of tartar, 2 tbsp splenda mixed until eggs form a peak, then piled on a cookie sheet with a central indentation and baked at 350 degrees for 25 minutes. While the meringue is baking, I dice an apple, sprinkle it with cinnamon and sweetener, then cook in the microwave. When the meringue is done, I top it with the apple mixture.
It makes a pretty good sized breakfast, so it's one of my favorites.1 -

The most amazing sesame red bean double baked croissant. Definitely one of the best I've ever had.
Also got a potato raclette tarte from the same bakery.

Made a vanilla cake with lemon curd/raspberry filling. Iced with whip cream.

The most amazing sesame red bean double baked croissant. Definitely one of the best I've ever had.

Yes. Yes. Red bean is so under appreciated as a delicious traditional sweet (western) alternative.
One of my favorite cakes is Harbs’ (red bean whipped cream with chestnuts).1 -

Their cakes are all phenomenal. I think I've tried every one (including one memorable time when a friend and I went and ordered 9 slices --I was 122 lbs at the time).
Mille crepe is also a favorite.
And their marron cake (because who can ever get enough chestnuts?) is so satisfying.

One of my friends who also lives there, was telling me about this place that was selling all this limited menu for the New Year - and she went on and on about their croissants - one with a red bean filling, etc., so I thought of it when you posted...looks super yum! One more reason to go for a visit...1 -

I tried a Pinterest recipe and it wasn’t terrible. Buffalo cauliflower tacos.
I’m not vegan but if you substitute this ranch for vegan ranch, it could be. 360 cals for two.3 -
Not plated for prettiness but it's amazing it made it to the plate at all.
Spinach salad with halved zima tomatoes, 2 halved and sliced persian cucumbers, homemade roasted golden and red beets, and 18 year balsamic vinegar. Homemade whole milk poached salmon (with garlic, thyme, dill, fennel seed). Side of roasted cauliflower and roasted kabocha squash.
And pellegrino with a little green kombucha. I earned this today.4
