    @JL2513 Are those carrot cake balls? They look absolutely delicious!

    This is our lunches for the week, shrimp pad thai and burrito bowls (chicken for my partner, and extra beans + jalapeno for me). The grocery store didnt have a single ripe avocado so I've got it in a brown paper bag so it'll hopefully ripen for the burrito bowls fairly quickly. :s

    ETA: I try to make lunches around 500-550 calories because I'm terrible at remembering to eat snacks.

    Yup, those are carrot cake energy balls :) Made with carrots, pecans, unsweetened coconut, honey, hemp seeds, cinnamon, cloves and nutmeg. I didn't make these myself, but there's a lady our office orders from who makes them at home and drops off orders every several weeks. Insanely good!

    Made this Blue Apron meal tonight! Pork and ginger meatballs with cabbage, white rice, and a soy glaze. Topped with radishes marinated in vinegar and sesame oil. Soooo good!

    Vegan ice cream and pizza! Vanilla strawberry twist with shortbread crumble, berries and chocolate.
    And vegan pesto chicken bacon ranch pizza! This was delicious and I'm a carnivore. Also a bunch of protein smoothies.

    Grilled tofu, boiled potatoes, pickles, roasted veggies and a fresh salad. Gets a participatory reward for creativity but it's very satisfying nonetheless.

    Love it! I grew up being served whole fish, even with the head still on, but a lot of Americans are just grossed out by it, I assume that's why your post was wooed :/

    2 days food stuffs (not including snacks):

    Quinoa Veggie Protein bites/muffins

    Ingredients:
    4 Large Eggs
    0.25 cup (46g) Quinoa (prepared in water and cooled)
    85 grams Carrots, diced
    5 ounces of Rainbow Bell Peppers, chopped
    1/4 cup Whey Protein Concentrate
    4 tbsp Mild Southwestern Salsa (the kind with black beans and corn in it)
    1 tsp Minced Garlic
    1/4 tsp Ground Nutmeg
    1/4 tsp Cajun Seasoning
    1 tsp Mrs Dash type seasoning
    1/2 tsp Dried Thyme
    1 tsp Saffron Rice Seasoning (yellow rice seasoning)
    1 tbsp, Extra Virgin Olive Oil

    Prepare quinoa in advance and allow to cool. Dice carrots and saute in the tablespoon of olive oil, covering to allow to steam til just no longer crunchy. Transfer to bowl and put in freezer to cool. Crack 2 eggs into a bullet blender and add the whey protein powder, blend til smooth and blended. Transfer to mixing bowl, scraping sides of bullet cup clean. (if you don't have a bullet blender just whisk it in as best you can) Add the 2 other eggs, and all the other ingredients and stir til mixed. Spray nonstick muffin tins with some nonstick spray. In regular-sized muffin tins this make 9 muffins and each muffin is almost exactly 90 calories. Fill the muffin cups til almost full using a big spoon and being sure stir the mixture so you get an even egg to solids ratio in each cup, and bake at 325 until the centers are no longer liquid (it's egg, so it's pretty easy to eyeball or just poke it with a toothpick and if it comes out mostly dry they are done). These are quite mild, if you wanted you could use a hot salsa or add more spices. It's also easy to scale the recipe up to make more.

    I was also going to woo @madwells1 hahaha :) because the fish is missing the head, and I like to see the eyes and gills when I buy the fish to check how fresh it was :) I also like to cook the whole fish, cheeks and eyes are delish :)

    My nieces 'fight' over who gets the eyes! lol!

    Killing me!! It was my first fish so go easy on me. You should have seen my face when I had to actually touch it at the market when I picked it out of the pile to inspect the eyes and the gills. Ewwww.
