    Sorry, but I have to withdraw from the challenge. I'm having some problems with my hip. I think I increased my mileage too fast and hurt my hip and knee again. Last time this happened I had to take time off and slowly add things in :( keep me in mind for another challenge I really did love trying to push myself. I certainly learned to drink my water and love it . Good luck to all I'll be cheering for you guys!!!!! :)

    Since I could not find any stairs, I did step-ups using my fireplace which has a 13 inch step. I figured that is much deeper than stairs, so doing 100 of those is just as effective. Trust me...it kicked my butt!

    Daily exercise challenge:YES.....50 crunches, 6 mile jog (60 minutes), 100 stairs, 100 jumping jacks. I did not do the other jumps. I just can't jump that much. I noticed someone did Squats, so I did that in place of the others also. Hope that's ok

    Exercise Challenge: Did Globe Jumps, Jumping Jacks, and Stepped up on a kitchen chair 100 times for my stairs. It was all I could think of and yes it was hard!

    I rode my bike for 3 miles of my 12 so I'm at 11/12 for the 100 mile challenge!

    Here is my favorite soup from the cookbook (Eat, Shrink and be Merry): Roasted tomato and red pepper soup with mini meatballs:)

    Soup:

    8 large plum or Roma tomatoes
    2 large red bell peppers, seeded and coarsely chopped
    1 large red onion, coarsely chopped
    1 tbsp minced garlic
    1 tbsp olive oil
    2 tbsp each minces fresh thyme and fresh rosemary (or 2 tsp dried italian seasoning)
    2 cups beef broth, divided
    1 cup v8 juice
    1/4 cup chopped fresh basil leaves or 2 tsp dried
    1 tbsp balsamic vinegar
    1 tsp granulated sugar
    1/2 tsp each salt, freshly ground black pepper, and crushed red pepper flakes

    Meatballs:

    12 oz extra-lean ground beef
    1/4 cup minced shallots or onions
    1/4 cup unseasoned dry bread crumbs
    2 tbsp grated Parmesan cheese
    1 egg
    1/2 tsp dried italian seasoning
    1/4 tsp each salt and freshly ground black pepper

    *Preheat oven to 450 degrees Farenheit. Coarsely chop tomatoes and combine with red peppers, onion, garlic, olive oil, thyme and rosemary in a very large roasting pan or on a very large rimmed baking sheet.
    *Place roasting pan in oven and roast vegetables for 15 minutes. Remove vegetables from oven and give them a quick stir. Return pan to oven on middle rack and turn on the broiler. Broil vegetables for 10 minutes.
    *Combine all meatball ingredients in a medium bowl and mix well. Form 48 mini meatballs using 1 tsp of meat mixture per ball.
    *Remove vegetables from oven. Transfer half the vegetables to a blender or food processor, along with 1 cup beef broth, and purée until smoth. Transfer puréed vegetables to a large soup pot. Chop remaining vegetables into bite sized pieces and add to pot, along with remaining beef broth, v8 juice, basil, balsamic vinegar, sugar, salt, black pepper, and crushed red pepper flakes. Bring soup to a boil. Add meatballs. Reduce heat to low, cover and simmer for 5-6 minutes, until meatballs are cooked through.
    Makes 8 servings.
