    Ingredients
    1. Keebler - Reduced Fat Graham Cracker Crust, 1 crust
    2. Jell-O - Sugar Free Fat Free Instant Chocolate Pudding - Dry Mix, 1 package
    3. Milk - Nonfat (fat free or skim), 1.5 cup
    4. Kraft - Fat Free Cool Whip, 1 container (50 tbsp.s ea.)

    Mix pudding with milk. Then add 1/2 the Cool Whip. Beat with mixer or by hand until smooth. Pour into crust. Spread the rest of the Cool Whip on top. Refrigerate at least 30 minutes before serving.

    I love this pie. I have been making it for years!

    Cherry Tomato Corn Salad
    Ingredients
    1/4 cup minced fresh basil
    3 tablespoons olive oil (I don't use this)
    2 teaspoons lime juice
    1 teaspoon sugar
    1/2 teaspoon salt (I don't use this either)
    1/4 teaspoon pepper
    2 cups frozen corn, thawed (I use canned)
    2 cups cherry tomatoes, halved
    1 cup chopped seeded peeled cucumber
    Directions
    1.In a jar with a tight-fitting lid, combine the basil, oil, lime juice, sugar, salt and pepper; shake well. In a large bowl, combine the corn, tomatoes and cucumber. Drizzle with dressing and toss to coat. Refrigerate until serving.

    This is one of my fav veggie side dishes. I made it 10 years ago when I did south beach & have continued making it since!

    Oven Roasted Vegetables

    •1 medium zucchini, cut into bite-size pieces
    •1 medium yellow summer squash, cut into bite-size pieces
    •1 medium red bell pepper, cut into bite-size pieces
    •1 medium yellow bell pepper, cut into bite-size pieces
    •1 pound fresh asparagus, cut into bite-size pieces
    •1 red onion, chopped
    •3 Tbsp extra virgin olive oil
    •1 tsp salt
    •1/2 tsp black pepper

    Preheat oven to 450 degrees.

    Cut zucchini, summer squash, red pepper, yellow pepper and asparagus into bite-size pieces.

    Put all vegetables in a large bowl and toss with the oil, salt and black pepper.

    Spread in a single layer in roasting pan

    Roast for 30 minutes, stirring occasionally, until vegetables are lightly browned and tender.
