Salmon filet roasted with potatoes, tomatoes, mushrooms in olive oil and balsamic vinegar, covered in feta cheese.

This sounds divine. Did you use a recipe??

No, I just decided that sounded like something I wanted to try.

I do that a lot. Sometimes it works, sometimes it doesn't. This one worked beautifully.

I used one fillet, one potato, one roma tomato, 6g of olive oil, 16g of balsamic vinegar, a handful of mushrooms, and a handful of feta, sprinkled a bit of basil and a bit of seasoning salt over it all.

Last night was grilled halibut steak in miso marinade with lemon barley and pickles.
Tonight is going to be grilled baramundi with leftover barley and cucumber tomato salad.

I've never had barramundi, but I see it popping up on menus lately. What kind of fish is it? White meat? More like a tuna?

Yesterday was my husband's b-day. I made Caprese bruchetta, wild mushroom risotto, and grilled beef tenderloin. We had flourless chocolate cake for dessert. Tonight I am making crab cakes with sauteed summer vegetables and herbs.

I think if I had to pick only one food to eat every day it would be this.

Too busy to cook (16-hour work day): Chicken breast meat pulled off a rotisserie bird, shelled cooked edamame that they sell in the produce section, soy sauce, red wine vinegar, hot sauce. And a potato roll with butter.

I am meal prepping today, so it's been a day of deliciousness. burritos, pasta with shrimp and tomato sauce, pasta with sausage and bell pepper sauce, and mashed potato bowls. I still have pasta with beef taco sauce, and chili with pasta.

Lots of pasta (tightening up the budget and pasta, rice, and dried beans are cheap). I need to look up some lentil recipes too.
