Poulet au vinaigre balsamique gone Keto for dinner. Used boneless/skinless. Browned it in the oven instead of a sturdy pot. Less time consuming, easing the arm grease necessary for the drippings and marrying the meat with the bouquet garni & mirepoix. Swede mash with a combination of cheeses including sharp cheddar ( loving the tang bite), sour cream & crunchy bacon bits. Salad ... EVERYTHING but for the devilled eggs we had forgotten to make. 😆🤣😆

Last night was grilled sirloin steak with roasted red potatoes and romaine salad with cherry tomatoes and a little grated parmesan.4

Keto dough with onions, tonnes of olives, peppers, zucchini, sun dried tomatoes, sweet and spicy Italian sausage and mozzarella above the sauce and veggies.

Lunch today:
Spiralized turnips roasted
Roasted mushrooms (seasoned with smoked paprika)
Rotisserie chicken
1.5 servings of Alfredo sauce
Mixed together for a hearty but low carb meal bowl. It was fantastic.
I buy my veggies precut/prespiralized/presliced to cut down on effort. I choose to spend a bit more for convenience5 -

Technically my last meal was a bowl of cheerios lol dinner for the last few nights though have been avacodo lime tacos made with flanks steak,Pico de gallo, avacodo-cilantro-lime dressing, corn tortillas, and fresh grilled jalapeños to top. So yummy and filling.2

Dinner was BBQ chicken wings, skillet grilled swede with onions, garlic and seasoning. Salad. All these were later juiced ( for pulp and juice)@ chunkier ingredients. The chicken and swede were turned into a thickish puree of baby food with some of the pulp added. Loathed using up so many dishes to eat from, however on separate purees ramekin servings work, so as to NOT lose flavour integrity. Mandatory soft foods diet, I am however refusing to succumb to what isn't my normal. Chicken breast or thighs would have been far easier to work with tbh.

Last night, Budget Bytes recipe... Hearty Black Bean Quesadillas (but I used far less* cheese so I could eat more; this was bad bc without cheese, the tortillas (Tumaro's; 60 cal; Let's Skip the Sandwich Wraps from grocery store deli area) don't stay closed well). Still yummy! I have made these before with roasted sweet potatoes and chicken added, but ran out of time to cook this week
Basically 1 can of black beans (or 15 oz cooked beans), garlic, onion, taco seasoning/DIY, added a little salsa, and 2 slices of fontina cheese (chopped). Recipe said 1/2c per small tortilla. Makes 10 servings (only 8 in my hands).
Roughly 90 cal* plus 60 for my wrap -> 150 cal each. A little lime juice makes it even better.
These freeze well.4 -
ginger beef and stir fry veggies with whole wheat angel hair
cook beef with Worcestershire, ginger, soy, garlic, black pepper, corn starch to thicken right at the end. add veggies. swirl and warm up
the noodles i made with a touch of soy and Worcestershire8 -
6 ounce chicken breast, bathed in fresh squeezed lemon with a little rosemary, chopped basil, cracked pepper, lightly battered in panko crumbs. sauteed in butter and olive oil. side dish of squash and zucchini and sweet onions sauteed in 1 Tblspn of olive oil and a little butter. add a little more lemon juice to the veggies, salt, pepper to taste. cut cherry tomato in half and warm up as the chicken is almost done. add a slice of low fat cheese to the chicken, top with fresh basil and enjoy!6

Last night I made chicken "linguine" alfredo (aldi doesn't sell fettucini lol), a pan of roasted vegetables, and garlic bread. Tonight my husband is grilling hamburgers and brats.3

We just had sweet potato gnocchi in walnut oil and sage with sautéed mushrooms, and Maltese rabbit spaghetti sauce2

Dinner tonight had a little more thought, given the soft foods diet. Scalloped swede with bacon bits. I should have added more salt, only I think it's better to under salt it VS ruining the dish. Fried coconut dusted fish. Salad. I did let the mozzarella topping get crusted over to a nice golden brown. I didn't think it needed more salt btw.

Made BBQ chicken wings for lunch. I did want to fry them ... Only, baking them was more convenient. Cream of chicken vegetable soup - made a roux then added the heavy cream + full milk ( to thin it out) and later the parmesan cheese which was then added to the drained, cooked in stock boil up veggies and chicken for that buttery creaminess. Low carb cheddar bay biscuits.
