I love fall!!! It's my fav season. Plus, it has my fav holiday - halloween!
My snacks & meals are the pumkin protein shake (already mentioned), roasted pumpkin seeds ( spinkle on an oven sheet, sprinkle on olive oil & spices & toast em up @ about 350) & my lil treat if I have been good Sweet & Sara Rice Kirspies which are vegan So good!0 -
Pumpkin muffins -
I used to make these a lot when I was on weight watchers.
1 box spice cake mix
1 can pumpkin - 15 oz
1 cup water
Mix well. Put into muffin cups. Bake at 350 for 20-25 min. Makes 24 muffins. Oh so yummy!!

You'll love this one!!! Pumpkin Mousse
15 ounces canned pumpkin
2 (3 1/2 ounce) boxes fat-free sugar-free instant vanilla pudding mix
1 3/4 cups skim milk
1 teaspoon pumpkin pie spice
2 cups fat-free whipped topping
Directions:
Combine pumpkin, spice, and milk in a mixing bowl. Mix until smooth. Add pudding mix and beat for 1-2 minutes. Fold in whipped topping. Chill well before serving.

Pumpkin Cranberry Bread
Ingredients
1 1/2 cups Pumpkin (canned)
1 cup Granulated White Sugar
1/2 cup Water
2 tbsp Ground Flaxseed Meal
1/4 cup Canola Oil
2 cups White Whole Wheat Flour
2 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon, Ground
1/2 tsp Ginger, Ground
1/2 tsp Nutmeg, Ground
1 cup Fresh Cranberries
Directions
Preheat oven to 350° F. and grease a loaf pan, 8 1/2 by 4 1/2 by 2 3/4 inches.
In a large bowl with an electric mixer beat together pumpkin, sugar, water, flax meal, and oil. Sift in flour, baking powder, salt, baking soda, and spices and stir just until batter is smooth. Stir in cranberries and spoon batter into loaf pan, spreading evenly.
Bake bread in middle of oven 1 hour and 15 minutes, or until a tester comes out clean, and cool in pan on a rack 10 minutes. Turn bread out onto rack and cool completely. Bread may be made 4 days ahead and chilled, covered.

pumpkin french toast and pumpkin hummus. here's recipe for the hummus
•1 15-ounce canned pumpkin
•2 tablespoons tahini
•1 garlic clove, chopped
•1 tablespoon fresh parsley, finely chopped
•1/2 teaspoon salt
•1 teaspoon olive oil
•1/2 teaspoon ground cumin
•1 tablespoon lemon juice
add all ingredients to a food processor.0 -
No Bake Pumpkin Cheesecake Recipe.... MUST TRY!!!
...7 oz 1/3 less fat Philadelphia Cream Cheese
1/2 cup pureed pumpkin (canned is fine)
1 tsp vanilla
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 cup brown sugar
, unpacked 8 oz Cool Whip Free,
thawed 9 inch reduced fat Graham Cracker Crust
In a large bowl using an electric mixer, whip cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice, and brown sugar for a few minutes until fluffy. Add Cool Whip and whip until smooth. Spoon mixture into pie crust and chill for a few hours, until firm. Servings: 8 • Size: 1/8th • Calories: 2390 -
This morning for breakfast, I had a bowl of oatmeal and I mixed in 1/4 cup canned pure pumpkin, cinnamon, and 2 equals then put a little bit of fat free reddi whip on top and it was delicious!!! It was like eating oatmeal pumpkin pie!:) It came to about 185 calories.0

OH! and I had a girls night wine party not too long ago and I made "pumpkin pie dip". I didnt use exact measurements because some people like it more creamy and some people like it more pumpkiny. Mix fat free cool whip, canned pure pumpkin, cinnamon, and 2 packets of equal. Then serve some low fat graham crackers or apple wedges to dip in it!:)0
