Last night was chili mac:
hamburger, crushed tomatoes, tomatoes w/ chiles, drained kidney beans, chili powder, cumin, and cinnamon. Brown the hamburger, add the cans and spices, and cook in the crockpot on low for 4 hours. Cook a box of mac w/ cheese sauce and stir into the chili.
Tonight is hamburgers.2 -
Taco salad!
I made a batch of vegetarian taco "meat" on Sunday using bulgur wheat. It's SO good. Threw it in to a salad with an "artisan lettuce blend" from Aldi (which I only got because they were sold out of romaine... but it is good, even if the name is a bit pretentious...), onion, tomato, fresh sweet corn lopped off the cob, beans (black + kidney + white beans), cheddar cheese (14g), avocado, fresh cilantro, some lemon juice, some olive oil, and some salt. Yummmm. I've had it for lunch every day since Sunday, so far. It's so good.4 -

I messed up. The hollandaise split, the gratin dauphinoise overbrowned and was over cooked. It did still taste good though.

Try Jamie Oliver baked cod/white fish with sun dried tomato paste in bread crumbs. (wholemeal). So simple and oh so delicious and so easy to prepare and cook. Have with fresh veg or mixed salad.

I'm not especially hungry tonight so I marinated some chicken which I'll cook tomorrow and roasted a head of broccoli cut up (including most of the stock) and tossed with olive oil, salt, white pepper, and dried rosemary. I ate all of it, because roasted broccoli is amazing.2

Sweetcorn and courgette fritters, with poached eggs and a sweet chilli sauce. It was nic3 to make something so very different from my usual staples!1

This thai style grilled chicken. I ate it on salad greens with mint from the garden (from a potted plant, don't plant mint outside of a pot unless you want a field of mint). I prefer it grilled outside, but the grill pan worked well this afternoon. I've also now confirmed that the marinade needs no oil.2

I've got colleagues coming round for lunch tomorrow.
Will give baby corn the Cambodian pot ang treatment (coconut cream, fish sauce, sugar, green onions and roasted. That's the starch.
Veg is green salad with home cured duck prosciutto, candied pecans, homemade croutons and maybe some sliced pear if they are by ripe tomorrow. Still considering the vinaigrette for that. Toss up between using pomegranate molasses, date molasses or balsamic.
I promised to demonstrate chicken wings in the air fryer as a main. These are dry brining now. Have both Vietnamese marketing water (caramel and fish sauce) and korean fried chicken sauce to toss those in.
I made creme caramel in the microwave today which is chilling but might have botched that. Life is too short cooking creme caramel the official way au bain marie, but we have a new microwave so the temperature might not have been right and the edges probably curdled.2 -
Butaman - Japanese steamed buns. I've made these a number of times in the almost two years since the recipe was published. It's really easy and one of my favorites. Used ground chicken instead of pork and almond milk instead of regular milk. I also used half the sugar than what's called for because otherwise it's just way too sweet for my taste. I also forgot to add the ginger despite it being on the counter.2

The hubby dropped a carton of eggs carrying in the shopping. All the rescued broken eggs have been turned into a Spanish tortilla for tomorrow's breakfast.

I've got 3 gratin dauphinoise going in the oven. Will re-heat one tonight to go with a gammon steak and roast asparagus. The other two will go in the freezer. Very easy gratin recipe below, but potatoes in milk must be cooked in good nonstick pan, otherwise clean up is a mess.

Awesome! My one suggestion would be to taste the salad dressing before you put the tamarind in. I don't think it needs as much (or any) but I'm also not all for really sour things with savory foods. I think this time I basically made nuoc cham (but without the water) - so the dressing that's called for, but without the tamarind.2 -
As we both work in the week, did roast chicken and roast veg today. Made a goulash in the slow cooker for later in the week and also knocked up a rather wonderful Cajun bean soup from the Pinch of Nom cook book.

I hope nobody from India is reading along, but I just cooked a big pile of Aloo Gobi. With bacalao as I wanted some protein in it with a specific texture. Tastes very good. I'm not cooking rice to go with it, and two portions go into the freezer.4

Last Thursday dinner I made lamb curry burgers, with mixed veg (zucchini, Brussels sprouts, mushrooms and yellow bell peppers) as a side. Also made a mint/malt vinegar/sugar sauce for the lamb.
(yikes! just remembered that I used up the last of the malt vinegar and should go get more)3 -
Veggie frittata today for breakfast, which will also cover breakfast for 3 days during the week. Put in onion, carrots, zucchini, orange and green peppers, kale, mushrooms, 6 eggs, nutritional yeast, olive oil and a heaping teaspoon of harissa. Yum!2

Still trying to nail gratin dauphinoise, gamon steak, roast green asparabus and hollandaise in my repertoire. Last time I split the hollandaise, overcooked the gratin which also over browned. This time the hollandaise was perfect, but gammon steak done on the grill pan instead of the air fryer was overcooked. Aspargus was also slightly over. We also had some roast baby corn which were perfect. Gratin was a little too overcooked. I guess I need to keep practicing this menu.

I made chicken korma! It came out amazinggg. Chicken thighs and onions sautéed in sunflower oil, then added a curry base mix with a spice paste made of turmeric, curry powder, garlic, ginger, garam masala, cumin, salt, plus two bay leaves and a little sugar. Cooked it all together then added low-fat coconut milk; boom, done!

Ooooo I forgot. After cooking the above for lunches this week, I threw together some quick turkey burgers to freeze for dinners later in the week. Ground turkey, egg, breadcrumbs, Worcestershire, ketchup, garlic powder, onion powder, and black pepper. 🤤2

I just took a galette in the oven. Per usual, I didn't make the recipe as called for. I didn't add the feta and eggs because I don't like either of those. I also didn't freeze the galette prior to putting it in the oven.
We'll see how it works out. I've had to keep a very close eye on it and ended up tenting it with foil half an hour into the 50 minutes of baking. It's resting right now and it looks like the bottom isn't burnt which is a good sign.1
