Very simple. 3 ingredients and 200g of each.
Cottage cheese
Potato
Onion
Boil potato, skin on.
As that's boiling saute your onion until soft.
When potatoes are done mash that up with cottage cheess, add onion and stir.
Form patties and simply either bake or crisp up in a good non-stick pan. Done.

Beef rendang pulled out of the freezer. Spiralized carrots with goma dressing tastes great but looks as attractive as mouse droppings. Indonesian tomato lalab. Rice.

Lightened mac and cheese where the sauce base was no fat cottage cheese blitzed in the food processor and thinned down with milk. Tastes less stodgy and less heavy than a traditional one based on bechamel. We had that with roast hispi cabbage.

Repurposing (and, tbh, rehydrating) the last of my failed Easter pot roast for a bowl of successfully fast miso soup with shirataki and zoodles.
Had eggs this morning so no soft boiled beauties here. Just threw on some furikake and added some nori instead.
Edit: I was too hungry, post-bike ride, to figure out nutritional values. Now that I'm more civilized, it turns out this was 222 calories (12g carbs, 11g fat, and 20g protein).

Starter of avocado vinaigrette. I am a bit kitchen fatigued. Normally the hubby cooks during week but now that I am working from home and can't hit the gym after work I am cooking weekdays too. Pulled out some batch cooked beef stew and gratin dauphinois from the freezer. Roasted some courgette in the air fryer while the gratin was warming up.

Pizza made using a new dough recipe - slow rising and only uses 0.2g yeast. Now I’ve tested the process of a super slow rise I should be able to stretch my current meagre yeast supply and maybe try the process with bread. 😊
Which means I can potentially make 35 loaves of bread per 7g yeast sachet! 😂7 -
