Day 2 of roast chicken. Chicken caesar. If we get hungry later we have a little leftover vodka sauce for pasta in the fridge and will make a little lumache alla vodka.

Pasta w jumbo shrimp, zucchini (romanesca), EVOO, chopped tomatoes, garlic, red pepper, white wine and black pepper.

Scarola (endive?) cooked in a non-stick frying pan w EVOO, sliced almonds, garlic and black olives.

Lemon pepper chicken breast with go to EVOO roasted cauliflower and green beans and a dab of mashed potatoes.

Mish Mash of leftovers (potatoes, carrots, sausages, sweet corn, tomatoes, onions, garlic and chives. Salt, pepper and hot paprika )2 -

Ah----thanks. I'm just a housewife that likes to cook and take pictures. The trick is to get up close. I take at least 4 pics of every dish and then pick the best one. When you zoom in, you can make almost anything look good.2 -

Actually, that's why I started posting on this thread. I make pasta or risotto everyday for lunch for the family and do protein and vegetables in the evening. In Italy everyone eats this way and they are thin. This is my son's plate of pasta ( I have to hold him back, and say "Just let me take a picture of this before you eat it"). I'm a normal weight, but have to watch my portions, my sons and husband are thin. Carbs are not the devil. A plate like this fills you up. They then have a small salad, a fruit, and a desert after. And yes, it's everyday.8 -

Baked tofu with broccoli and spring rolls! I stuffed it with turkey, veggie and flavored it with ginger, garlic and soy sauce.

Poached white asparagus, prosciutto cotto, boiled new potatoes with butter on the side, hollandaise. Side salad with ranch.

Pepperonata on Pearled Spelt.
A little of the rest of the batch of Pepperonata will probably grace a slooooow rise pizza base tomorrow with a little mozzarella and a bunch of capers and black olives. 😋4 -

My husband doesn't eat meat (spit it out as a child and they tried to make him eat it). So, I respect that and the majority of my pasta dishes are without meat. However he will eat fish, and I too, cook it often. He has always been thin and it drives me crazy because he eats cheeses and deserts.
Also, cooking fish is an art. It can get dry really fast if overcooked. My compliments.4 -

I really hope ppl here look at your pics and do take a notice of how Italians cook their pasta dishes vs the north american way.
You mean "al dente" instead of overcooked? That's so easy--use a durum grain pasta always (if using dry) and if the package says 10 min cooking time, take it out at 9 min. I always take a piece out at about 8 min and taste. Different companies can make a slight difference. When cooking pasta watch the clock like a hawk or set a timer.3 -
