Homemade “lunchroom cafeteria” yeast rolls to go with leftover cajun pasta.

Day 2 of managing leftovers from Friday's roast chicken. Avglemono soup and greek salad. Dinner was pretty light so we might get hungry later. I made an aquafaba meringue disk yesterday for pavlova that we didn't eat. Might use that for Eton mess if we get hungry later tonight.

Made apple cake in cupcake and mini cupcake size. Gave out to neighbors (large ones) . Weird baking in face mask and gloves. But got to keep everyone safe.

@Safari_Gal_ Made your bread today...can't wait to try a piece with dinner!
@widgit808 - wow! Looks so professionally done! I hope you like it!! Can’t wait to hear about it!

@Safari_Gal_ The bread was fantastic! Thank you so much! Im living keto the last 4 months, feeling fantastic but miss the comfort of bread sometimes...this 100% cured that. THANK YOU💜1 -
Not a meal but much needed for my 1st Easter solo. Keto lemon loaf with an added tsp of pineapple extract...Spring.

Got motivated by all the bread pics to try something different: Blueberry Banana Bread
But because I'm half-Jamaican, recipes are mere suggestions. Therefore, my version kinda follows the link above EXCEPT...
* 4 bananas instead of 3
* substituted all the white sugar for brown sugar
* reduced sour cream by half
* substituted last 0.5 cups of enriched flour for buckwheat flour
* added 0.25 cups more blueberries (for the topping)
* added 2 tbsp of chopped walnuts (for the topping)
It's SO moist and perfect with coffee since it's not too sweet.
However, be warned, it's all fun and games until you figure out the calories. My adapted version yields 18 servings [178 calories: 28g carbs, 6.8g fat, 2.4g protein]. Still worth it!
If I were to do it again - and I will - I'd add some additional fiber to make the carb hit worth it (ex. like this one from North Coast Naturals)

The very last of the leftover roast chicken from Friday night. Last bit got turned into coronation chicken to have on a sandwich at lunchtime. Now I just need to deal with carcass in the freezer saved for stock making.

Cakes made from what you would find inside pierogi (cottage cheese, potato, onion and garlic) with roasted broccoli.
Anyone wants this stupid easy, low calorie recipe let me know. Serves one.
Absolutely! Please share...I love cottage cheese- I use it savory or sweet. Your 'cakes' sound interesting😋0 -

Very simple. 3 ingredients and 200g of each.
Cottage cheese
Potato
Onion
Boil potato, skin on.
As that's boiling saute your onion until soft.
When potatoes are done mash that up with cottage cheess, add onion and stir.
Form patties and simply either bake or crisp up in a good non-stick pan. Done.
my kind of 'cooking' - simple and fast to apply to face😋Thanks so much2 -
Ravioli with bacon and sweet peas:turkey stir fry for lettuce wrap!

Beef rendang pulled out of the freezer. Spiralized carrots with goma dressing tastes great but looks as attractive as mouse droppings. Indonesian tomato lalab. Rice.

Some very spicy ramen w leftover pulled pork.

Big salad1 -
Kielbasa, Asparagus, Red onion, Sweet pepper over Orzo with pesto and lemon juice

Lightened mac and cheese where the sauce base was no fat cottage cheese blitzed in the food processor and thinned down with milk. Tastes less stodgy and less heavy than a traditional one based on bechamel. We had that with roast hispi cabbage.

Repurposing (and, tbh, rehydrating) the last of my failed Easter pot roast for a bowl of successfully fast miso soup with shirataki and zoodles.
Had eggs this morning so no soft boiled beauties here. Just threw on some furikake and added some nori instead.
Edit: I was too hungry, post-bike ride, to figure out nutritional values. Now that I'm more civilized, it turns out this was 222 calories (12g carbs, 11g fat, and 20g protein).

Starter of avocado vinaigrette. I am a bit kitchen fatigued. Normally the hubby cooks during week but now that I am working from home and can't hit the gym after work I am cooking weekdays too. Pulled out some batch cooked beef stew and gratin dauphinois from the freezer. Roasted some courgette in the air fryer while the gratin was warming up.

Pizza made using a new dough recipe - slow rising and only uses 0.2g yeast. Now I’ve tested the process of a super slow rise I should be able to stretch my current meagre yeast supply and maybe try the process with bread. 😊
Which means I can potentially make 35 loaves of bread per 7g yeast sachet! 😂7 -
Roll your own California hand rolls with miso soup and a side of gomae.

Bran muffins ... no applesauce in the house so pumpkin puree was substituted. Also added pumpkin spice

Last nights leftovers.
