    Nope--my recipe uses ricotta cheese. It's actually a ricotta pear cake, but I used apples---it's really good.

    Ricotta Apple Cake

    3 eggs
    150g sugar
    300g ricotta cheese
    100g coconut
    200g flour
    2 tsp baking powder
    475 g cubed apples
    1 1/2 tsp cinnamon
    grated lemon rind

    Mix eggs and sugar
    Mix ricotta w cinnamon and lemon rind
    Mix above and add flour, coconut and baking powder
    Add cubed apples (or pears)
    Mix all and pour into a roughly 9" round pan w high sides lined with parchment paper, or buttered and floured

    Bake at 300° 60 min or until done.

    Greek plates of rice, seasoned ground venison, homemade tzatziki, and a cucumber/tomato/kalamata salad with Greek dressing and feta!

    It's customary to eat the entire fish in Asian cultures- the eyes are reserved for guests. Anytime we'd have fish served I remember my little nieces 'fighting' over who got the eyes!

    Starter of wings with spanish sauce, celery sticks and ranch. Main of Txuleton steak, oven fries with truffle oil and parmesan, Portuguese carrots, Turkish peppers cooked like pimientos padron. Sauces were hollandaise and blue cheese butter. Dessert of creme catalan cooked in the microwave. The small one is the kid's portion.

    400ish calories of Trader Joes gluten-free tortilla, Daiya cheese shreds, and some sour cream and mild salsa [before anyone is confused: I’m dairy-less not dairy free, so one of the few real dairy products I have is sour cream]

    Copycat KFC done in the air fryer with the Chicago Tribune recipe for the 11 herbs and spices. Copycat Kraft dinner using cheddar cheese powder. Turkish watermelon and feta salad.

    Tropical-inspired chicken and sticky coconut rice. I cooked down the marinade with a little cornstarch slurry and made it into a delicious, extra sauce.
