A dessert - raspberries, tangerines, cream, biscuits

Still too hectic at work for me to cook so hubby made dinner. Dutch boerenkool stampot (=mash with kale). Traditionally served with smoked sausage but we found a butcher that does free range hot dogs.

Salmon, ramen (brown rice/millet) and sautéed protein greens. I buy the Organic Girls brand of protein greens and it varies a bit what is included but it may be baby kale/spinach/chard/choi, etc. This batch was primarily spinach.
I again did the sauce with Hoisin, soy sauce and garlic. The proportions are on the bottle and it's intended as a marinade but it works well as a sauce. We are hooked on it and some combination of this will be part of our regular rotation.

Vegan ‘chicken tikka pieces’, pilau rice and peas, tomato & onion salad, mini fenugreek flatbread and salad.

lunch feta sprinkled with some seeds ,cherry tomatoes and olives/dinner red beans, green onion, pickled peppers, sesami oil salad and a snack of forest fruits

Madras curry broccoli and Vindaloo chicken with peas and carrots

A colleague came over for dinner. My mom's contact fried ginger and green onion fish recipe, my mom's treatment for frozen peas to go with asian food, cucumber salad and rice. Creme brulee for dessert.

Discovered this as a tasty snack: Light and Fit key lime yogurt, 1/2 a crumbled graham cracker, and some coconut whipped cream. A 112 calorie key lime pie!

Grilled chicken and southwestern quinoa salad. I haven’t made this salad in like... 4+ years? I used to make it almost weekly. I’m not sure why I stopped but I’m bringing it back. It’s DELICIOUS4 -

Beef estouffade we pulled out of the freezer, roast carrots and courgettes. Hubby made mash.

Made this last week: raw carrots, green beans blistered in a little bit of bacon fat, stir-fry beef with teriyaki sauce, spinach salad with snap peas and red bell pepper.

You inspired me. Bought black beans and Mexican corn today. Have quinoa and limes. Now to figure out the rest.2 -
Today menu - lasagna without pasta - layers gouda cheese and ragu - minced meat with tomato sauce and at dinner iceberg salad with cherry tomatoes and sweet potato, sesam oil and lime juice

After months of drooling over @acpgee s air fried food my husband bought be an air fryer. This is my first attempt at using it. Air fried chips and chicken nuggets. Also stir fried fine green beans (no oil) and steamed broccoli. The whole family was a fan.
This is our DIY way of eating greens. Love it.
All greens from the allotment: spring onions, parsley, sour sorrel and a green called “citlik (chitlik) otu” unfortunately I don’t know the name in English. Feta, green and black olives and Pide bread.11 -

Penne with Asparagus, Baby Plum Tomatoes, Spinach and an Oil-free Vegan Pesto I made yesterday. Game changer for me! I’ve never made pesto because it’s just too many oil calories when you add in the pine nuts and Parmesan too. This uses Aqua Faba and Nutritional Yeast so I can ‘afford’ the Pine Nut calories. Absolutely delicious!

Niçoise salad at my local joint... their anchovies and tuna are always great.
There is always debate in French gastronomie on tuna/thon being including in a traditional Niçoise salad — but I vote yes. (With Mediterranean thon rouge being one of the best tasting.) 😋 viva la anchovies too!
