Ingredients
1 small can mushrooms – drained
I don't like canned, what do you think the equivalent would be in fresh chopped? Do you think it would change anything?

CHICKEN TACO SOUP
Just open a can of this and that and off you go!
Ingredients
2 chicken breasts, boneless and skinless
1 can (15 oz) baked beans
1 can (15 oz) kernel corn
1 can (15 oz) kidney beans
1 can (14 oz) black beans
3 cans (14 oz) stewed tomatoes
1 package taco seasoning mix
Directions
• Put chicken breasts in bottom of slow cooker (Crock-pot).
• Mix all ingredients and pour over chicken.
• Cook 6-8 hours on LOW heat.
• Take chicken out and shred with knife and fork and mix back in.
• Cook another 30 minutes.
• Serve with low-fat shredded cheese and/or low-fat sour cream.
Servings per recipe: 16 Per serving: 132 calories, 3 grams fat, 18% calories from fat, 15 grams carbohydrate. (Counts as 2 Weight Watchers points.)
I make this, but I use more like 2 lbs of chicken breast (frozen work great, but fresh/thawed works too). It really shrinks up in the crockpot. ---you can also brown 1lbs of hamburger meat (beef or turkey) and use that instead. --- I also use pinto beans in place of baked beans and only 1 or 2 cans of tomatoes. Diced tomatoes work well too. I also add a diced onion and a little fresh minced garlic. The next time I make this, I will be using a homemade taco seasoning which will cut the sodium WAY down. Just google homemade taco seasoning, there are a bazillion recipes out there.0 -

Just use as many as you'd like, it won't really change the nutritionals. In fact, your sodium will probably be reduced. If it were me, I would buy 1 fresh package (i think they are 8oz) - slice them up and toss them in.0 -

Do you drain the beans before you add them?0 -

Chicken Ruben Bake
Makes 4-6 servings (Ideal slow cooker size: 4 qt)
each serving 1 to 1 1/2 cups.
4 boneless, skinless chicken breast halves
1 lb. bag sauerkraut, drained & rinsed
4-5 (1 oz, each) slices Swiss Cheese
3/4 cup fat-free Thousand Island salad dressing
2 Tbsp. chopped fresh parsley
1. Place chicken in slow cooker. Layer Sauerkraut over chicken. Add cheese. Top with Salad dressing. Sprinkle with parsley.
2. Cover. Cook on low 6-8 hours.
Basic Nutritional Values: Calories 217 (cals from Fat 41) Total fat 5 gm. (Sat fat 2.0 gm) Polyunsat fat 0.6 gm, MonoFat 1.4 gm, Cholosterol 63 mg. Sodium 693 mg. Total Carbs 13 gm. Dietary Fiber 2 gm, Sugars 6 gm. Protein 28 gm.0 -
Scalloped Chicken
Makes 4 servings (Ideal crock pot size: 4 qt)
1-1 1/2 cup per serving
5 oz. pkg. Scalloped potatoes
Scalloped potatoes dry seasoning pack
2 chicken breast halves
2 chicken legs
10-oz pkg. frozen peas
2 cups water.
1. Put potatoes, seasoning pack, chicken, and peas in slow cooker. Pour water over all.
2. Cover. Cook on Low 8-10 hours, or on High 4 hours.

I posted the Chicken Ruben bake and the scalloped chicken. Both have serving sizes listed, but they are 1 to 1 1/2 cups per serving according to the recipes. I got these from my Fix-it and Forget-it Diabetic crock pot cookbook.
